Easy Instant Pot Stuffed Cabbage Rolls ready for dinner

Preparing Instant Pot stuffed cabbage has quickly become one of our favorite Instant Pot recipes due to its incredible ease and speed. We’re constantly adding new, effortless dinners to our collection, and this traditional dish, made simple with a pressure cooker, stands out as a true crowd-pleaser.

Mastering Stuffed Cabbage Rolls in Your Electric Pressure Cooker

For many years, simple cabbage dishes weren’t on my radar. My nana made them often, but my younger self was not easily convinced. Fast forward to adulthood, and now I absolutely adore the hearty, comforting flavors of cabbage! After perfecting this recipe for my husband when we were newlyweds, I was eager to adapt it for my new electric pressure cooker. The results were astounding – tender cabbage, perfectly cooked filling, and deep, infused flavors that tasted like they’d simmered for hours.

The beauty of this recipe lies in its adaptability. You can use any brand of electric pressure cooker to achieve fantastic results. Whether you own an Instant Pot, Mealthy, Crockpot Express, or a Ninja Foodi, the core pressure cooking method remains consistent. If you happen to have a Ninja Foodi with its air fryer function, consider a quick broil at the end to melt some parmesan cheese on top for an extra layer of deliciousness.

If you’re new to the world of pressure cooking, you’ve come to the right place! We specialize in easy, one-pot meal recipes that simplify your cooking routine. To help you get started, here are a few essential tips:

  • Make sure to bookmark our Instant Pot recipes page. We regularly update it with fresh, exciting ideas!
  • For perfect results every time, print this Instant Pot cooking times cheat sheet. It’s an invaluable guide for understanding how long various meats, vegetables, and beans take to cook under pressure.
  • I strongly recommend investing in a non-stick inner pot for your pressure cooker. This greatly minimizes the chances of food sticking or triggering the “burn” notice, especially when sautéing.
    • While it’s good practice to know how to deglaze your pressure cooker after sautéing, a non-stick liner makes the process almost effortless.

For context, the recipes you’ll find here are typically developed using a 6-quart Instant Pot model.

Crafting Authentic Pressure Cooker Cabbage Rolls

Some time ago, I experimented with an unstuffed cabbage casserole on the stovetop, which was quite delicious. However, there’s something uniquely satisfying about the traditional rolled style of stuffed cabbage that keeps us coming back. It’s a comfort food icon for a reason! For this specific recipe, using a 6-quart Instant Pot, I’ve found that certain accessories, like a 6-7 inch oven-safe dish or springform pan, work perfectly for holding the rolled cabbage. These fit snugly on the trivet inside the pot, allowing for even cooking.

For this recipe, you’ll primarily use the large, outer leaves of the cabbage. Regardless of whether you’re making these in the oven or a pressure cooker, a crucial first step is to quickly blanch the cabbage leaves. This brief boiling softens them just enough to make them pliable, allowing you to easily wrap the hearty filling like a perfect burrito.

And don’t worry about waste! I too dislike discarding food. The rest of the cabbage head offers a multitude of culinary possibilities. A quick search for “cabbage” on our site will yield tons of ideas. Our absolute favorite way to utilize the remaining cabbage is to transform it into Instant Pot fried cabbage – it’s always a huge hit and makes a fantastic side dish!

The Flavorful Foundation: Instant Pot Stuffed Cabbage with a Rich Tomato Base

The journey to these delectable stuffed cabbage rolls begins with perfectly cooked rice. We recommend starting with Instant Pot white rice, which takes only minutes to prepare and ensures a consistently fluffy texture for your filling. Once your rice is ready, the next step involves browning your ground meat right in the Instant Pot using the sauté function. This means less cleanup, as all the initial cooking can be done in a single pot!.

For the luscious liquid base that coats and infuses your cabbage rolls with flavor, you have several excellent options. Tomato soup provides a creamy, slightly sweet depth, while plain tomato sauce or even your favorite spaghetti sauce offers a more robust, savory profile. The key is to ensure the rolls are well-coated, allowing the flavors to penetrate every layer. If you enjoy a bit of warmth, a pinch of red pepper flakes can be added to the sauce, or keep it mild for a classic taste that appeals to everyone.

Essential Ingredients for Your Stuffed Cabbage Rolls

Creating these delightful Instant Pot stuffed cabbage rolls requires a thoughtful selection of fresh ingredients and pantry staples. Here’s what you’ll need to assemble this comforting dish:

  1. A 7-inch oven-safe bowl or springform pan: This size fits perfectly inside most 6-quart Instant Pots when placed on a trivet.
  2. 1 head of cabbage: You’ll be using primarily the larger outer leaves for rolling.
  3. 1 cup of water: For steaming the cabbage leaves to soften them.
  4. 1 can (14 oz) diced tomatoes: Petite diced tomatoes are preferred for their texture, and varieties with chilies can add a subtle kick.
  5. 2 cups cooked rice: Whether you prefer white or brown rice, ensure it’s precooked.
  6. 1/2 lb Italian sausage (spicy is fantastic): For a boost of flavor and spice.
  7. 1/2 lb ground beef: A classic choice for a hearty filling. Don’t forget, you can learn how to defrost Instant Pot frozen ground beef if you’re short on time.
  8. 1/2 onion, diced: Adds aromatic depth to the filling.
  9. 1 tsp seasoning salt (optional): I often use Lawry’s for a balanced flavor profile.
  10. 3/4 cup tomato sauce or spaghetti sauce: The essential binder and flavor base for the filling.

Don’t forget salt and pepper to taste, along with any other seasonings that are family favorites. The image below shows how your perfectly rolled stuffed cabbage will look nestled in the pan, ready to be placed on the trivet inside your Instant Pot.

Using Oven-Safe Dishes in Your Instant Pot: A Guide

A common question is whether regular dishes can be used inside the Instant Pot. The answer is yes, provided they are oven-safe and can fit comfortably within the inner pot on a trivet. For this specific recipe, we utilized a 7-inch casserole dish, which is an ideal size for a 6-quart Instant Pot. Large ramekins or any other oven-safe bakeware that fits within the circumference of your pot and can be safely lifted in and out will work wonderfully for cooking pressure cooker dishes.

Step-by-Step: Crafting Stuffed Cabbage Rolls in Your Instant Pot

Follow these detailed instructions to create succulent stuffed cabbage rolls effortlessly in your pressure cooker:

  • Prepare the Rice: Begin by cooking your rice according to your preferred method. We recommend using your Instant Pot for perfectly fluffy rice (about 2 cups cooked). Once done, set it aside.
  • Blanch the Cabbage Leaves: Carefully remove the core from your cabbage head and gently peel off the largest outer leaves. In a pot of boiling water on the stovetop, blanch the cabbage leaves for approximately 3 minutes, just until they are softened and pliable enough to roll without tearing. They should not be mushy.
  • Cool and Drain Cabbage: Remove the blanched cabbage leaves and place them on paper towels to drain excess water and cool slightly.
  • Sauté the Filling: Set your Instant Pot to the “Sauté” function. Add a splash of olive oil, then brown the Italian sausage and ground beef. Incorporate the diced onion and any seasoning salt (like Lawry’s) you desire. Cook until the meat is no longer pink and the onions are softened. Once cooked, turn off the Instant Pot.
  • Combine Filling Ingredients: Stir the cooked rice and tomato or spaghetti sauce into the meat mixture until well combined. Transfer this flavorful meat and rice mixture to a separate bowl and rinse out your Instant Pot’s inner pot.
  • Prepare for Pressure Cooking: Pour 1 ½ cups of water into the cleaned inner pot of your Instant Pot, then insert the trivet.
  • Roll the Cabbage: Lay a softened cabbage leaf flat on a cutting board. Spoon a generous amount of the meat and rice mixture onto the leaf. Fold in the sides of the leaf, then roll it up tightly, like a neatly wrapped present.
  • Arrange Rolls in Dish: Place the rolled cabbage, with the folded side facing down, into your 6-7 inch oven-safe dish or springform pan. Continue until all the filling is used.
  • Add Topping: Pour the diced tomatoes evenly over the arranged cabbage rolls. This is also a good time to add any additional seasonings, at least a generous sprinkle of salt and pepper.
  • Pressure Cook: Carefully place the dish with the cabbage rolls onto the trivet inside the Instant Pot. Close the lid and ensure the sealing valve is in the “Sealing” position. Set the Instant Pot to “Manual” or “Pressure Cook” on high pressure for 15 minutes.
  • Release Pressure: Once the cooking cycle is complete, allow for a natural pressure release for about 10 minutes, then carefully perform a quick release of any remaining pressure.

Serve your Instant Pot stuffed cabbage rolls hot, spooned onto plates. Enhance the flavor with a sprinkle of fresh parmesan cheese and a dash more of your favorite seasonings. If you opted for spicy Italian sausage, you likely won’t need many additional spices, as the sausage itself provides a fantastic depth of flavor. For an intensely savory and spicy experience, you could even use only spicy Italian sausage and omit the ground beef entirely. Sometimes, I also add a bit of finely diced onion to the topping for an extra layer of texture and taste.
