Instant Pot taco soup is a year-round family favorite, bursting with rich, savory flavors. Imagine a warm, hearty meal prepared in just 6 minutes of pressure cooking, then topped with cool sour cream and served alongside crunchy chips or a warm roll. Whether you’re seeking comfort during the colder months or simply adore everything about Instant Pot tacos, this soup is a must-try.

My pressure cooker is an indispensable kitchen tool, used almost daily. This easy Instant Pot taco soup recipe stands out as one of our most cherished Instant Pot recipes, consistently ranking high on my kids’ list of favorites.
Instant Pot Taco Soup: A Quick and Versatile Meal
One of the primary reasons I love this recipe is how effortlessly it comes together, yet it delivers an incredible depth of flavor. It’s the quintessential comfort food – quick to prepare with pantry staples, making it ideal for those busy evenings when you have less than 30 minutes to cook and enjoy a complete meal.
For the meat component, you can choose between lean ground beef or flavorful ground sausage. If you’re aiming for a vegetarian taco soup, simply omit the meat or use a plant-based alternative. Forgot to defrost your ground meat? No worries! You can easily follow our Instant Pot frozen ground beef instructions first, then proceed with the recipe. The rest of the ingredients primarily consist of canned pantry items, making this recipe incredibly convenient.

Beyond the Instant Pot: Crafting Ninja Foodi Taco Soup
This recipe is highly adaptable. While it calls for a variety of ingredients, you have the flexibility to omit anything you don’t prefer or to easily transform it into a vegetarian taco soup. We typically prepare our version without added heat, but incorporating a bit of spice is simple. Serve it with a generous side of scoop tortilla chips, and watch the kids enthusiastically devour it!
For those who enjoy a little kick, a dash of chili powder can be added to your liking. However, it’s equally delicious without. Think of it as a deconstructed taco, enveloped in a rich, savory broth, making it a perfect meal to enjoy throughout the year.
The Convenience of 6-Can Instant Pot Taco Soup
For busy families like ours, I cannot recommend the Instant Pot enough. It has revolutionized our mealtimes, allowing us to gather and eat together more frequently. While “Instant Pot” is a popular brand, other electric pressure cookers like the Ninja Foodi and Crockpot Express function similarly and can be used for this recipe.
The speed at which these appliances cook is truly remarkable! I primarily utilize the pressure cooker and sauté functions, both of which are central to preparing this delicious soup. I’ve developed a wide array of easy Instant Pot recipes, and I encourage you to explore them alongside this one. Don’t be intimidated; these appliances are surprisingly user-friendly! Key Ingredients and Smart Substitutions
Let’s dive deeper into the ingredients that make this Instant Pot taco soup so special, along with some helpful notes and substitution ideas:
- Ground Meat: I typically use lean ground beef for its classic flavor and texture. However, feel free to substitute with ground turkey for a leaner option, or even half spicy ground sausage (like Jimmy Dean) for an extra kick. You’ll sauté your chosen meat along with onions in a bit of olive oil during the initial step to brown it perfectly.
- Beans: Canned and drained kidney beans are a must for us, adding heartiness and a satisfying texture. For even more substance and variety, I often include an additional can of either pinto beans or black beans, always rinsed and drained. If you prefer to cook dried beans from scratch, consult our How Long Do Beans Take to Cook guide first, then drain and proceed.
- Corn: Canned corn, drained, or frozen corn both work wonderfully. There are no significant differences in cook time between the two. The corn adds a delightful “chew” and a different textural element to the soup.
- Tomatoes: Canned stewed tomatoes are the easiest to use. These typically come as larger, boiled varieties that haven’t been chopped, contributing to a thicker soup texture. I also like to add a can of petite diced tomatoes for additional body and flavor.
- Seasonings: The stars of the show are taco seasoning and ranch seasoning. You can, of course, adapt these to your family’s preferences. Feel free to add other beloved spices like onion powder or garlic powder for extra depth.
- Tomato Sauce: This ingredient helps thicken the soup to your desired consistency; simply use more or less. For a different flavor profile, you can substitute tomato sauce with red enchilada sauce.
Can You Use Leftover Chicken? Absolutely!
You can easily swap out the ground meat for poultry. If you have leftover cooked chicken, you’re already ahead of the game and won’t need to sauté it first. Both white meat (from breasts) and dark meat (from thighs) work well; choose whatever you prefer or have on hand. I recommend dicing the cooked chicken into small, bite-sized pieces for ease of eating.

Flavorful Variations and Smart Substitutions
Customizing your Instant Pot Taco Soup is part of the fun! Here are some ideas to make it uniquely yours:
- Smoked Green Chiles: Diced smoked green chiles are an optional but highly recommended addition for an extra layer of mild, smoky flavor. A small can of mild chiles makes a big difference.
- Adding Heat: If you’re craving a spicier soup, it’s quite simple to achieve. I suggest starting with a light hand until you find your preferred level of heat. Begin with about 1/8 teaspoon of red pepper flakes, or consider dicing up some fresh jalapeños, which also add a wonderful texture. Chili powder is another excellent option for boosting the spice.
- Bean Variety: While kidney and pinto beans are staples, don’t hesitate to experiment with other bean types like black beans, cannellini beans, or even Great Northern beans for different textures and flavors.
- Meat Alternatives: For a completely plant-based meal, replace ground beef with a hearty mix of extra beans, lentils, or plant-based ground meat substitutes. The rich seasonings will still ensure a flavorful vegetarian taco soup.
- Vegetable Boost: Feel free to toss in extra vegetables like bell peppers (sautéed with the onions), zucchini, or even a handful of spinach at the end for added nutrition.
Taco Soup with No Beans? Yes, You Can!
While beans contribute significantly to the soup’s heartiness and texture, you can certainly leave them out if they’re not your preference. The soup will still be delicious and flavorful. However, for a truly satisfying and robust meal, I recommend including a few different varieties of beans. Onions, however, are a non-negotiable for me – I literally add them to almost everything I cook in my Instant Pot or Ninja Foodi!

Prep Time: 5 mins | Cook Time: 2 mins | Total Time: 7 mins | Servings: 6
Equipment
- 1 pressure cooker
Ingredients
- 1 pound ground beef, or ground turkey
- 1 cup onion, diced
- 2 tbsp olive oil
- 1 can kidney beans, drained
- 1 can pinto beans, drained
- 1 cup corn, canned or frozen
- 1 can stewed tomatoes
- 1 can petite diced tomatoes
- 1 can diced chiles, 4 oz.
- 1 can sliced olives, 2.25 oz.
- 2 tbsp taco seasoning
- 1 tbsp ranch dressing seasoning
- 1 can tomato sauce, 8 oz
Instructions
- Set your Instant Pot to the “Saute” function and begin browning the ground beef. Break up the meat with a spoon as it cooks.
- Once the beef is partially browned, add the olive oil, diced onions, taco seasoning, and the powdered ranch dressing mix. Continue to sauté and stir the mixture.
- Cook until the ground beef is completely browned with no pink remaining, and the onions have softened and become translucent.
- Carefully drain both cans of kidney beans and pinto beans, then add them to the Instant Pot. Incorporate all other ingredients listed, with the exception of the sour cream (which will be a topping).
- Stir all the ingredients together thoroughly within the pot to ensure they are well combined.
- Secure the lid on your Instant Pot, making sure the steam release valve is closed and sealed. Set the cooker to “Manual” or “Pressure Cook” on High pressure for 6 minutes. If you prefer your beans to be exceptionally soft, you can increase the cooking time up to 10 minutes. Once the cooking cycle is complete, perform a quick release of the pressure.
- Carefully open the lid, stir the rich and aromatic taco soup, and serve it hot. Garnish generously with sour cream and avocado, and offer a side of crunchy tortilla chips for dipping!

Essential Taco Soup Toppings for the Perfect Bowl
Elevate your Instant Pot Taco Soup with a variety of delicious toppings that add texture, flavor, and visual appeal. Here are some favorites:
- Cheese: Grated cheddar, Monterey Jack, a Mexican blend, or crumbly queso fresco adds a delightful richness and melty goodness to your soup.
- Avocado: Sliced or diced avocado provides a creamy, refreshing contrast and healthy fats.
- Sour Cream/Greek Yogurt: A dollop of sour cream or plain Greek yogurt offers a cool, tangy element that beautifully balances the soup’s robust flavors.
- Fresh Herbs: Fresh cilantro leaves are a popular garnish, adding a burst of herbal and citrusy flavor.
- Spice Boosters: For those who love heat, sliced or diced jalapeños (fresh or pickled), a sprinkle of red pepper flakes, or a dash of your favorite hot sauce are excellent additions.
- Lime Wedges: Serve fresh lime wedges on the side; a squeeze of lime juice over your bowl adds a zesty, bright kick.
- Crispy Elements: Crushed tortilla chips, corn chips, or even homemade crispy tortilla strips add a satisfying crunch.
- Other Favorites: Sliced radishes offer a crisp and peppery contrast. Tangy and slightly sweet pickled red onions can provide an extra layer of flavor and color. Sliced black olives add a briny and savory component.
Smart Ways to Store and Save Leftover Taco Soup
Having thoroughly enjoyed your Instant Pot Taco Soup, you might find yourself with delicious leftovers – which is fantastic! I always strive to minimize food waste, so here are my best suggestions for safely saving your soup for another meal. The first crucial step is to allow the soup to cool completely, for at least 20 minutes, before refrigeration. Placing hot food directly into the fridge can raise the internal temperature of the appliance, potentially speeding up bacterial growth in other foods, so always cool first.
For storage, use airtight containers or resealable freezer bags. Ensure your chosen containers are freezer-safe if you plan to freeze the soup. When filling containers or bags, leave about an inch of space at the top to allow for expansion if freezing. This prevents containers from cracking or bags from bursting.
Always clearly label your containers or bags with the contents (e.g., “Instant Pot Taco Soup”) and the date it was prepared. This helps you keep track of its freshness. If you intend to consume the leftover soup within 3-4 days, store it in the refrigerator. Place the containers in an easily accessible spot. For longer storage, freezing is your best option. Taco soup can typically be frozen for 2-3 months without a significant loss in quality. Be meticulous about labeling with the date you froze the soup.
Effortless Reheating for Delicious Leftovers
When you’re ready to enjoy your delicious leftover taco soup, proper reheating is key. If the soup was frozen, transfer it to the refrigerator to thaw overnight. Once thawed (or if it was refrigerated), you can reheat it on the stovetop over medium heat, stirring occasionally, or in the microwave. Ensure the soup reaches a safe internal temperature of 165°F (74°C) throughout for proper food safety. Stir the soup well after reheating to distribute flavors and ensure even warmth.
