My profound appreciation for bold, vibrant flavors stems from an unexpected place: my early childhood. I was born and raised in Hawaii for the first six years of my life, an experience that undoubtedly shaped my palate and inspired a deep love for dishes that truly awaken the senses. This Hawaiian chicken recipe captures the essence of those island flavors, bringing a taste of paradise right to your kitchen.

Crafting Your Instant Pot Hawaiian Chicken: Choosing the Right Cut

When preparing Instant Pot Hawaiian chicken, the choice of protein plays a crucial role in the final texture and flavor. This time, we opted for boneless, skinless chicken breasts, prized for their lean texture and ability to absorb the rich Hawaiian sauce. However, boneless chicken thighs are an equally, if not more, delicious option, often yielding a juicier, more tender result due to their higher fat content. My personal preference, and often my family’s, leans towards white meat, but I always recommend using what’s fresh, on sale, or readily available in your fridge. For optimal flavor absorption and even cooking under high pressure, cut your chosen chicken into medium-sized, large bite-sized pieces. This ensures every morsel is infused with the sweet and tangy essence of the Hawaiian sauce.

Instant Pot Hawaiian Chicken Using Frozen Chicken

Life can be hectic, and sometimes you find yourself with frozen chicken and a craving for a quick dinner. Good news: making Frozen Chicken in the Instant Pot is absolutely feasible for this recipe, provided the pieces are small and not frozen together in a solid block. If you’re working with fresh chicken diced as directed in the recipe card below, a mere 6 minutes under high pressure is all you need. If your chicken is straight from the freezer and impossible to slice, don’t worry, there are two simple approaches you can take:

Option 1: Cook, Shred, and Sauce Separately

  1. Place the frozen chicken (whole or larger pieces) into the Instant Pot with 1 cup of broth.
  2. Cook under high pressure for 12 minutes, followed by a 1-minute natural release.
  3. Carefully drain any remaining liquid from the pot.
  4. Shred the now tender chicken directly in the Instant Pot.
  5. In a separate bowl, whisk together all the Hawaiian sauce ingredients until smooth.
  6. Turn the Instant Pot to the “Sauté” function.
  7. Pour the prepared sauce over the shredded chicken and allow it to bubble for a few minutes until it thickens and the chicken is thoroughly warmed through and coated. Serve immediately.

Option 2: Par-Cook and Finish in Sauce

  1. Follow steps 1-3 from Option 1, but cook for 6 minutes instead of 12 (since it will cook further in the sauce).
  2. Drain the liquid and return the chicken to the pot.
  3. Proceed as directed in the main recipe below, adding the Hawaiian sauce ingredients and cooking everything together for the remaining time needed to fully cook the chicken and thicken the sauce. This ensures the chicken absorbs maximum flavor from the sauce during its final cooking stage.

If you’ve never experienced the delightful flavors of easy pineapple chicken before, you’re in for a treat! The natural sweetness of the pineapple is beautifully complemented by a touch of heat from the Sriracha. You have complete control over the spice level in this pressure cooker pineapple chicken. The recipe below provides a very mild kick, so feel free to adjust the Sriracha quantity to suit your preference for more heat.

How Long Does it Take to Cook Hawaiian Chicken in Instant Pot?

One of the most appealing aspects of this Instant Pot Hawaiian chicken recipe is its incredible speed. The active cooking time under high pressure is a mere 6 minutes! Factoring in the time it takes for the Instant Pot to come to pressure (typically around 9-10 minutes, depending on the model and amount of liquid), you’re looking at a total preparation and cook time of approximately 15-20 minutes. This makes it an ideal choice for busy weeknights when you need a delicious and satisfying dinner on the table fast. If you enjoy a bit more warmth in your meal, a pinch of red pepper flakes can be added. However, we personally adore the sweet and tangy profile of this dish, so we usually omit the extra heat.

What is Hawaiian Chicken Sauce Made Of?

The magic of Instant Pot Hawaiian chicken lies in its incredibly flavorful sauce, a perfect balance of sweet, savory, and tangy notes. To create this irresistible sauce, you’ll combine the following key ingredients:

  • Brown sugar: Provides a deep, caramel-like sweetness.
  • Minced ginger: Adds a warm, zesty, and aromatic quality.
  • Minced garlic: Essential for a pungent and savory depth.
  • Ketchup: Contributes a rich, tomato-based tang and color.
  • Soy sauce: Delivers umami and a savory, salty foundation.
  • Rice vinegar: Offers a mild acidity that brightens the sauce and balances the sweetness.
  • Pineapple juice + chunks or tidbits: The core of the Hawaiian flavor, adding natural sweetness and fruity texture.
  • Diced onion and/or small bits of bell peppers (optional): For added aromatic depth and subtle crunch.
  • Sriracha: A crucial ingredient that cuts through the sweetness with a pleasant, mild heat, which you can adjust to your preference.

There’s no need for an overnight marinade; simply combine all the ingredients directly into the Instant Pot with the chicken, and you’re good to go! This versatile sauce can even be used with other proteins. Imagine the same delicious flavors gracing Instant Pot Hawaiian pulled pork, or drizzled over leftover rice for a quick flavor boost. The main ingredients ensure a truly authentic sweet-style Hawaiian BBQ chicken experience.

Can You Use Chicken Thighs in This Recipe? Absolutely!

Yes, absolutely! While we often use chicken breasts for our Instant Pot chicken recipes, chicken thighs are an excellent alternative for this Hawaiian chicken dish. They tend to be more forgiving, staying wonderfully juicy and tender even under pressure, thanks to their slightly higher fat content. Many home cooks prefer thighs for their richer flavor profile. The beauty of cooking at home is the flexibility to choose ingredients that best suit your taste, budget, and what you have on hand. If you bought chicken in bulk or found a great deal on thighs at your local store, don’t hesitate to use them. You might even discover a new favorite!

Equipment

  • 1 pressure cooker

Ingredients

  • 2 lbs chicken breasts, or thighs, boneless, skinless, diced
  • 1 cup pineapple juice
  • 1 cup pineapple tidbits
  • 1/3 cup soy sauce
  • 1 tbsp garlic, minced
  • 1/2 tbsp ginger, minced
  • 1 tbsp rice vinegar
  • 1/2 cup ketchup
  • 1/3 cup brown sugar
  • 1.5 tbsp Sriracha, makes it cut down the sweetness, but not spicy, add more if you want heat
  • 1/2 small onion, diced, optional
  • 3 tbsp cornstarch, + 3 tbsp of hot liquid from pot to thicken at end

Instructions

  1. Put your diced (bite size) pieces of chicken as well as all other ingredients in the list into your pressure cooker (except for the cornstarch, which will be used later).
  2. Stir everything together thoroughly to ensure the chicken is well coated with the sauce mixture.
  3. Secure the lid on your pressure cooker and close the steam valve. Set the cooker to high pressure for 6 minutes.
  4. Once the cooking cycle is complete, perform a quick release of the pressure. Then, turn off the pressure cooker (cancel button) and select the “Sauté” function.
  5. In a small separate bowl, whisk together 3 tablespoons of cornstarch with 3 tablespoons of the hot liquid taken from inside your pot. This creates a slurry. Pour this cornstarch mixture into the bubbling contents of the Instant Pot.
  6. The mixture in the pot should now be actively bubbling. Continue to stir and allow it to bubble for approximately 1 minute, which will help the sauce thicken. After 1 minute, turn the pot off.
  7. The sauce will have visibly thickened a bit, and it will continue to thicken further as it rests for a few more minutes off the heat.
  8. Serve your delicious Instant Pot Hawaiian chicken as is, or traditionally, on a bed of warm rice. Enjoy your meal!

Traditionally, I love serving this dish on a bed of fluffy Instant Pot white rice. I often prepare the rice in my Instant Pot mini simultaneously, ensuring everything is ready at the same time. Beyond rice, you could serve it alongside additional fresh fruit for the children, or with a vibrant side of steamed vegetables like broccoli or snap peas, or even a crisp side salad for a lighter, low-carb meal. Garnish with a sprinkle of sesame seeds and freshly chopped green onions for an extra touch of flavor and visual appeal.

Frequently Asked Questions (FAQ)

How do you make Hawaiian chicken spicier?

Increasing the heat in your Hawaiian chicken is simple! You can easily add more spice with red pepper flakes, finely diced jalapeños, a dash of dry Sriracha powder, or chili powder. It’s best to start with a small amount, cook, taste, and then adjust to your desired spice level, as it’s much harder to temper the heat if you add too much initially.

Is Huli Huli chicken Hawaiian chicken?

While both are popular chicken dishes with a Hawaiian connection, Huli Huli chicken and Hawaiian chicken (as presented in this recipe) are distinct. Huli Huli chicken traditionally features chicken thighs basted and cooked with a specific teriyaki-style marinade, often rotisserie-style. Our Hawaiian chicken, however, emphasizes a rich sauce primarily made with pineapple, soy sauce, and a blend of other sweet and savory ingredients, offering a different but equally amazing flavor profile. Both are fantastic culinary experiences!

What are the best sides for Hawaiian Chicken?

Beyond classic white rice, consider serving your Hawaiian chicken with brown rice, quinoa, or cauliflower rice for a low-carb option. Steamed or stir-fried vegetables like bell peppers, snap peas, or broccoli florets complement the flavors beautifully. A simple green salad or a fruit salad with tropical fruits can also add freshness and balance to the meal.
