  • 3 lb pork roast, cubed
  • 1 cup broth, beef, chicken or vegetable can be used
  • 2 cup enchilada sauce, green, or salsa verde can be used
  • 1 small onion, diced
  • 12 oz jalapenos, in can, diced, less if you want it milder
  • 12 oz green chiles, in can, diced
  • 2 tbsp olive oil

Instructions

  1. Remove fat from outside of pork roast (optional), then cube it into 1.5″ pieces.
  2. Set your Instant Pot (or other pressure cooker) to the sauté function and add olive oil. Once hot, add the cubed pork roast and brown the outsides of the meat. Turn the pot off or cancel the sauté function.
  3. Remove the browned meat. Deglaze the pot using your 1 cup of broth to scrape any browned bits off the bottom of the pot. Leave the chicken broth in the pot.
  4. Return the meat to the pot along with the diced onion and green enchilada sauce.
  5. Close the lid and ensure the steam valve is set to seal. Set your pressure cooker to pressure cook on high for 30 minutes.
