Do you appreciate a vibrant beet side dish but hesitate to make it from scratch? This straightforward pressure cooker beets recipe will utterly surprise you with its simplicity. In just minutes, you can transform fresh, firm beets straight from the garden into soft, delicious gems. This is just one of the many Instant Pot recipes we share on The Typical Mom blog, designed to make healthy eating accessible and enjoyable.

Mastering Whole Beets in Your Instant Pot

Beets are often an overlooked vegetable, but when prepared correctly, they offer a unique sweet and earthy flavor profile. The key to truly enjoying beets lies in achieving that perfect, tender texture, which the Instant Pot excels at. With just your electric pressure cooker and its accompanying trivet or a steamer basket, you’re mere minutes away from wholesome, tender bites of this incredibly healthy root vegetable.

You don’t necessarily need an official Instant Pot brand cooker for this recipe. We’ve successfully prepared these in our Crockpot Express and Ninja Foodi pots, and they yield equally fantastic results. While you could technically slice or cube your beets before cooking, opting to cook them whole is actually easier and often preferred. Once they’re soft, slicing, dicing, or even blending them into dishes like cured salmon with beets becomes a breeze.

If you’re new to the wonderful world of pressure cooking, you’ve come to the right place! We offer a wealth of easy one-pot meal recipes. To get you started on your pressure cooking journey, here are a few essential tips:

  • Make sure to Bookmark our Instant Pot recipes page. We consistently add new and exciting dishes each week!
  • For a quick reference, print this handy Instant Pot cooking times cheat sheet. It’s an invaluable tool for understanding how long various meats, vegetables, and beans take to cook in your pressure cooker.
  • We highly recommend investing in this non-stick inner pot. It significantly minimizes issues, especially after sautéing, although it’s still good practice to know how to deglaze a pressure cooker.

For context, the recipes you’ll find here are typically developed using a 6-quart Instant Pot model.

Cooking Instant Pot Beets Without a Steamer Basket

While a dedicated steamer basket is a useful accessory, it’s not strictly necessary for cooking whole beets in your Instant Pot. The basic trivet that comes with your pressure cooker is all you truly need to keep the whole beets elevated above the cooking liquid at the bottom of the pot. This ensures they steam perfectly without boiling, retaining their nutrients and preventing them from becoming waterlogged.

Ninja Foodi Pressure Cooker Beets: A Versatile Approach

Before mastering the pressure cooker, we explored air fryer beets, which are good but don’t quite achieve the same fork-tender texture as pressure-cooked versions. The Ninja Foodi is a fantastic appliance for beets because it offers both pressure cooking and air frying capabilities. You can follow the same timing and instructions provided here for pressure cooking both red and yellow beets in your Ninja Foodi. The primary difference between red and yellow beets lies in their sweetness and earthy notes; yellow beets tend to be milder and sweeter, and they have the added benefit of not staining your hands or kitchen surfaces like their red counterparts!

Pressure Cooking Beets and Carrots Together: A Smart Combination

Absolutely! Beets and carrots are excellent candidates for pressure cooking together due to their similar density and cooking time requirements. Both are hard root vegetables that benefit from the pressure cooker’s ability to tenderize them quickly and evenly. We often pair them in our popular Instant Pot potatoes and carrots recipe, showcasing how wonderfully they complement each other as healthy and flavorful side dishes.

For many, fresh beets can look a bit daunting, especially when they’re still covered in soil right from the garden. Before the advent of electric pressure cookers, attempting to cook them seemed like a significant culinary challenge. However, thanks to these amazing multi-cookers, preparing beets is now as effortless as making baked potatoes! If you own a Ninja Foodi, you even have the option to make crispy air fryer beets, but for truly tender results, pressure cooking is the way to go.

Preparing Beets for Consumption: Peeling and Slicing

Once your beets are perfectly cooked and tender, the next step is preparation for eating. The thin, papery skin of beets is best removed. You can either peel them when they are raw (though this is much harder) or, ideally, after they’ve been cooked and are wonderfully succulent. To peel them post-cooking, simply rub the skins off with a paper towel. Be aware that the vibrant pigment of red beets can temporarily stain your fingers, so if this is a concern, consider wearing a pair of gloves. After peeling, you can easily cut or slice them into any desired shape.

The beauty of this method lies in its simplicity: just add about a cup of cold water to your pressure cooker pot, place the trivet (especially one with handles for easy removal!), arrange the cleaned beets on top, seal the lid, and set it to cook. A quick release after a natural pressure release ensures they’re perfectly tender. You could also use a steamer basket if you prefer. Are you ready to introduce this colorful and nutritious vegetable to your meal rotation?

Can Beets Be Eaten Raw? Absolutely!

Yes, beets can indeed be enjoyed raw! When shaved thinly or grated, raw beets offer a surprisingly sweet and crisp texture. The flavor profile of raw beets is distinctly different from cooked beets, making them a versatile ingredient to experiment with. Raw beets retain all of their natural vitamins and nutrients, offering maximum health benefits. Consider adding grated raw beets to salads or slaws for a delightful crunch and burst of color.

Do You Have to Peel Beets? Recommended for Best Taste and Texture

While the skin of beets is technically edible, it’s generally recommended to peel them for the best culinary experience. The outer layer can be quite bitter, tough, and fibrous, which can detract from the otherwise sweet and tender flesh. Peeling also helps to remove any residual dirt that might cling to the skin. You can peel them raw (though it requires a bit more effort) or, as suggested, after steaming them in the Instant Pot, which makes the skin incredibly easy to rub off. Just remember to wear gloves if you want to avoid temporary stains on your hands!

Essential Ingredients for Perfect Instant Pot Beets

Preparing delicious Instant Pot beets requires just a few simple ingredients. The magic happens primarily in the pressure cooker, allowing the natural flavors of the beets to shine.

  • 2-3 medium to large whole beets: Aim for beets roughly the size of a baseball, which fit comfortably in most pressure cooker pots with some space in between for even cooking.
  • 1 cup of water or vegetable broth: This provides the necessary liquid for steaming the beets to tender perfection. Broth can add an extra layer of savory flavor.
  • 2 tablespoons olive oil: Used to coat the cooked beets, enhancing their flavor and giving them a lovely sheen.
  • 1 teaspoon black pepper: A classic seasoning that complements the earthy sweetness of beets. Adjust to your preference.
  • 1 teaspoon Himalayan pink salt: Our preferred choice for seasoning, offering a balanced mineral flavor. Regular sea salt works just as well.

Seasoning and Size Variations for Your Beets

The beauty of this recipe is its adaptability. While our basic seasonings are a fantastic starting point, feel free to customize them to your palate. For those who enjoy a little kick, a sprinkle of red pepper flakes can add a pleasant heat. If you’re leaning towards a more savory profile, garlic powder or even a touch of smoked paprika would be delicious additions.

Regarding beet size, our recipe is optimized for medium to large beets (around baseball size). If you happen to have exceptionally large or “ginormous” beets, you might need to increase the pressure cook time by an additional 5-10 minutes, bringing the total to around 30-35 minutes, to ensure they become perfectly fork-tender throughout.

Creative Culinary Uses for Your Steamed Beets

Once you’ve mastered steaming beets in your Instant Pot, a world of culinary possibilities opens up! Their tender texture and distinct flavor make them incredibly versatile. Here are some inspiring ideas for what you can create with your perfectly steamed beets:

  1. Pickle them: Just like cucumbers or cabbage, pickled beets are a tangy, delicious condiment or snack.
  2. Mash them: Treat them like potatoes! Mash with a touch of butter, olive oil, and your favorite herbs for a vibrant side dish.
  3. Slice them for sandwiches: Add thinly sliced beets to your favorite sandwiches or wraps for extra flavor and nutrition.
  4. Dice into risotto: Incorporate diced beets into creamy risotto for a beautiful color and earthy sweetness.
  5. Blend into soup: Enhance the color and nutritional value of your homemade tomato soup or create a vibrant beet soup.
  6. Simple side dish: Drizzle with olive oil, a squeeze of lemon, and a sprinkle of fresh herbs for an elegant and healthy side.

I must admit, I was a latecomer to appreciating this intriguing vegetable. Much like my initial hesitation with Instant Pot brussels sprouts, I was wary of beets. But as I’ve gotten older, I’ve realized the importance of “trying everything once.” To my pleasant surprise, beets were quickly added to my “now I love them” list, and even my kids found their vibrant color quite fun!

Step-by-Step Guide: How to Cook Whole Beets in an Instant Pot

Cooking whole beets in your Instant Pot is a simple and rewarding process. Follow these detailed steps to achieve perfectly tender and flavorful beetroot every time:

  • Preparation is key: Begin by thoroughly cleaning the beets to remove any dirt from their surface. Trim off any leaves and the root end they may have.
  • Set up your pressure cooker: Place the steaming rack (trivet) into the pressure cooker pot. Pour in the specified amount of water (or broth). Carefully arrange the cleaned whole beets on the steaming rack, ensuring they are not submerged in the water.
  • Pressure cook: Close the pressure cooker lid and position the steam release valve to the sealed position. Select the “Pressure Cook” (or “Manual”) setting on high pressure and set the cooking time for 25 minutes.
  • Release pressure: Once the cooking time is complete, allow the pot to naturally release steam for 5 minutes. After this natural release period, carefully turn the valve to the venting position to perform a quick release of any remaining pressure.
  • Cool and handle: Remove the beets from the pot. You can either let them cool until they are comfortable to handle, or for a quicker cool-down, run them under cold running water.
  • Peel and trim: Once cooled, the skins should easily rub off. Peel off the skin and trim any remaining root ends or tops.
  • Slice and season: Cut or slice the cooked beets into your desired shape. Thin wedges are a popular choice. Drizzle the olive oil over the sliced beets, then sprinkle with pepper and salt. Gently mix until all beet pieces are well coated in the oil and seasonings.
  • Serve and store: Taste and adjust seasonings as needed. Serve your delicious beets at room temperature, or refrigerate them until you’re ready to enjoy. Store any leftovers in an airtight container in the refrigerator for up to 3-5 days. Enjoy your healthy, homemade Instant Pot beets!
What happens when you eat beets?

One notable, yet harmless, effect of eating beets is that your urine might turn reddish or pink. This phenomenon, known as beeturia, is simply due to the natural pigments (betacyanins) in beets passing through your system. It’s perfectly normal and no cause for alarm, often occurring after drinking beet juice as well.

Is it safe to drink beetroot juice every day?

Studies suggest that consuming about 2 cups of beetroot juice daily can help lower blood pressure in healthy adults. While generally considered safe, it’s always wise to consult with your doctor before making significant dietary changes, especially if you have underlying health conditions.

Remember that cooking times can be slightly adjusted based on your desired beet texture. If you prefer your beets a bit firmer, you can reduce the cooking time by a few minutes. For softer, melt-in-your-mouth beets, extend the time slightly. It’s all about personal preference! Here are a few other pressure cooker vegetable recipes that make fantastic healthy side dishes:

  1. Give our Instant Pot spaghetti squash a try for a quick and easy low-carb meal.
  2. For maximum efficiency, Instant Pot steamed vegetables allow you to cook several types of veggies simultaneously in one pot.

Canned vs. Steamed Beets: A Nutritional Comparison

When comparing canned beets to freshly steamed beets, you’ll find that their nutrient and fiber content are quite similar. However, the most significant difference lies in sodium levels. Canned beets typically contain a much higher amount of sodium due to the canning process. Steaming fresh beets at home, as outlined in this recipe, gives you complete control over the amount of salt added, making it a healthier choice, especially if you’re managing blood pressure. The same steaming instructions apply if you’re using a Ninja Foodi for this easy recipe, ensuring a delicious and healthy outcome.

The Amazing Health Benefits of Beets

Beyond their vibrant color and unique flavor, beets are a nutritional powerhouse, packed with essential vitamins, minerals, and plant compounds. Incorporating them into your diet, especially through easy methods like Instant Pot cooking, can offer a host of health advantages:

  • Rich in Nutrients: Beets are a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C. These nutrients are crucial for various bodily functions, from cell growth to bone health.
  • Good Source of Fiber: The high fiber content in beets supports digestive health, promotes regularity, and can help with weight management by increasing feelings of fullness.
  • Support Heart Health: Beets are rich in nitrates, which the body converts into nitric oxide. Nitric oxide helps to relax and widen blood vessels, leading to improved blood flow and reduced blood pressure. This contributes significantly to cardiovascular health.
  • Boost Athletic Performance: The nitrates in beets have also been linked to improved athletic performance by enhancing oxygen use and increasing stamina. This makes beet juice a popular supplement among athletes.
  • Anti-inflammatory Properties: Beets contain betalains, pigments that give them their vibrant color and possess powerful anti-inflammatory and antioxidant properties. These compounds help protect cells from damage and may reduce the risk of chronic diseases.
  • Brain Health: Improved blood flow, thanks to the nitrates, also benefits brain function, potentially enhancing cognitive performance and reducing the risk of age-related cognitive decline.

Making beets a regular part of your diet is a delicious way to boost your overall health and wellness. And with the Instant Pot, getting these benefits has never been more convenient!

Troubleshooting and Expert Tips for Instant Pot Beets

While cooking beets in an Instant Pot is generally straightforward, a few tips can help you achieve perfect results every time and navigate any common issues:

  • Uneven Cooking: If your beets vary greatly in size, try to select similarly sized beets for more uniform cooking. For very large beets, consider increasing the cook time slightly or cutting them in half before pressure cooking.
  • Under or Overcooked Beets: The 25-minute cooking time is a great starting point for medium-sized beets. If your beets are consistently too firm, add 2-3 minutes to the cooking time. If they are too soft, reduce by 2-3 minutes next time.
  • Stubborn Stains: Red beets can leave vibrant stains on cutting boards, hands, and even clothes. To prevent this, wear gloves while peeling and cutting. For cutting boards, wash immediately with soap and water or use a paste of baking soda and water for tougher stains.
  • Enhance Flavor: Don’t be shy with seasonings! A splash of apple cider vinegar, a squeeze of fresh orange juice, or a sprinkle of fresh dill or parsley after cooking can elevate the flavor profile of your beets significantly.
  • Batch Cooking and Storage: Instant Pot beets are perfect for meal prepping. Cook a large batch, peel, slice, and store them in an airtight container in the refrigerator for quick additions to salads, grain bowls, or as a convenient side throughout the week. They will stay fresh for 3-5 days.

With these tips, you’ll be cooking perfectly tender, flavorful Instant Pot beets like a pro in no time!
