For years, I’ve experimented with countless Instant Pot recipes, refining techniques to achieve ideal results every time. The biggest challenge often lies in ensuring noodles and meat cook evenly and emerge perfectly tender, not mushy or undercooked. I’m excited to share my tried-and-true methods and essential tips to help you master the art of pressure cooker casseroles.

Universal Pressure Cooker Casserole Techniques

Whether you own an Instant Pot, a Ninja Foodi, a Crockpot Express, or a Mealthy Pot, the fundamental principles for making a fantastic pressure cooker casserole remain the same. These recipes are designed for any electric pressure cooker. If you have a multi-cooker like the Ninja Foodi with both pressure cooking and air frying lids, you’ll simply use the pressure cooking lid (the one that isn’t attached) for this method.

The Secret to Perfect Instant Pot Casseroles: Layering

Creating a mouthwatering casserole in your Instant Pot is surprisingly simple, provided you follow one crucial rule: do NOT stir your ingredients together before pressure cooking. This layering technique is the cornerstone of preventing the dreaded “BURN” notice and achieving evenly cooked, tender pasta or rice alongside your protein. You can incorporate chicken, pork, ground beef, or even stew meat, like in our popular Instant Pot Beef Stew Casserole, with a variety of noodles or rice. Think rotini, penne, medium shells, or macaroni – choose your favorite! Even leftover ham can find a delicious new life in a creamy pasta casserole. We’ll delve into the specifics of layering below.

If you’re new to the world of pressure cooking, don’t worry! We have plenty of easy one-pot meal recipes and foundational tips to get you started on your culinary journey:

  • Make sure to Bookmark our dedicated Instant Pot recipes page. We’re constantly adding new and exciting dishes each week!
  • For quick reference, PRINT this handy Instant Pot cooking times cheat sheet. It will prove invaluable for understanding how long various meats, vegetables, and beans take to cook in your pressure cooker.
  • I highly recommend investing in a non-stick inner pot for your Instant Pot. This significantly enhances your cooking experience.
    • While knowing how to deglaze a pressure cooker after sautéing is an essential skill, a non-stick liner will drastically reduce issues like food sticking and prevent the burn notice.

For context, I primarily use a 6-quart Instant Pot for all my recipe development and testing.

Determining Casserole Cooking Times in a Pressure Cooker

The cooking time for your Instant Pot casserole largely depends on your choice of starch: noodles or rice. Pasta cooks much faster. For instance, a pasta-based dish like our Instant Pot Crack Chicken Casserole can be ready in as little as 3 minutes of pressure cooking time. Grains like rice, on the other hand, typically require 12-18 minutes to cook and fluff up properly.

Precision is key when it comes to liquid and ingredient ratios. Insufficient liquid will almost certainly trigger the frustrating burn notice. Conversely, adding too much pasta can result in an undesirable texture. And remember that golden rule: never stir the pasta or rice into the other ingredients before pressure cooking! This is a common pitfall that can lead to clumping and the burn notice.

Below, I’ll elaborate on these crucial points and share a fantastic new recipe for what we call Instant Pot Pork Pasta. This recipe is incredibly versatile; you could easily substitute shredded rotisserie chicken or leftover turkey for the pork, making it a perfect solution for using up ingredients you already have on hand.

As mentioned, you can use any type of pre-cooked protein you prefer. If your meat is raw, simply use the sauté function at the beginning of the cooking process with a bit of olive oil. Cook until it’s no longer pink, then turn off the sauté function and proceed with the layering instructions below. The main ingredients you’ll need for a delicious pressure cooker casserole include:

Essential Instant Pot Casserole Ingredients

  1. Pasta: I find small to medium-sized pasta shapes work best for casseroles. Avoid long noodles, which are better suited for dishes like our Instant Pot spaghetti. Rotini, penne, or macaroni are excellent choices.
  2. Broth: Chicken, beef, or vegetable broth will infuse your casserole with incredible flavor. While water can be used as an alternative, it simply doesn’t deliver the same depth of taste.
  3. Meat: If you’re using leftover, pre-cooked meat, you can skip the initial sautéing step with olive oil. This is a fantastic way to utilize shredded chicken, pork, or beef.

Vegetables can also be a wonderful addition to your casserole. I suggest about 3/4 of a cup of mixed frozen vegetables for the best results; they cook down nicely and become tender along with the other ingredients. If you own a Ninja Foodi, you can even melt an additional layer of cheese on top using the air crisp function for an extra cheesy finish.

Transforming Leftovers into Delicious Casseroles

Absolutely! Using leftover meat is one of my favorite ways to create quick and easy meals, especially with our pressure cooker chicken and rice recipe. I’m a firm believer in minimizing food waste, and the Instant Pot makes it incredibly easy to repurpose ingredients into a second, equally delicious meal. If you share this philosophy, proper storage of your cooked leftovers is key. Once cooled, store larger pieces of meat whole in a freezer bag, ensuring all air is removed to maintain moisture. When you’re ready to use it, remove it from the freezer about 30 minutes beforehand, then chop it into small, bite-sized pieces, or use it as is if it’s already shredded. The goal is consistent sizing for even distribution.

This approach not only saves you time since the meat is already cooked but also ensures it warms up beautifully with the other ingredients. Leftovers can sometimes dry out, but cooking them in the Instant Pot with a rich, thick sauce allows the meat to reabsorb moisture, making it wonderfully tender and flavorful.

Elevate Your Casserole: What to Add for Enhanced Flavor

While the base casserole is delicious on its own, a few additions can truly take it to the next level:

  1. Cheese: A non-negotiable in our household! Cheese adds a creamy, savory richness that elevates any casserole.
  2. Sour Cream: For an extra velvety texture and tangy depth, stir in some sour cream after cooking. This is an optional but highly recommended step for ultimate creaminess.
  3. Cornstarch Slurry: If you prefer a thicker sauce, whisk a bit of cornstarch with cold water to create a slurry. Set your Instant Pot to sauté, and once the casserole begins to bubble, stir in the slurry until it thickens to your desired consistency.

I occasionally add vegetables too, though fresh varieties can be tricky. Frozen mixed vegetables, however, are a safe bet as they tend not to get too mushy during pressure cooking. We often use them in our pressure cooker chicken noodle casserole.

Top Tips for Making Casserole in a Pressure Cooker: Avoiding the Burn Notice

If you adore one-pot meals but dread turning on your oven, especially during warmer months, the Instant Pot is your culinary hero. Now, let’s dive into the most important tips to ensure your success and help you steer clear of the dreaded BURN notice on your Instant Pot screen:

  1. Invest in a Non-Stick Pot: I cannot stress this enough – get the non-stick inner pot I recommended earlier! It will make cleanup a breeze, but more importantly, it will drastically reduce the likelihood of the burn notice appearing.
    • The ceramic non-stick coating acts as an excellent barrier between your food and the heating element.
    • Some Instant Pots can be incredibly temperamental, displaying a burn notice even when nothing is genuinely sticking. This specialized pot will prevent many of these false alarms.
  2. Layer Your Meat at the Bottom: Whether you’ve sautéed raw meat with olive oil or are using pre-cooked protein, always ensure it forms an even layer across the very bottom of your pot.
  3. Build Your Layers Thoughtfully: Next, carefully layer your other ingredients on top of the meat. Follow this with your chosen liquid – chicken broth, beef broth, or vegetable broth. Remember, broth will always impart significantly more flavor than water. The exact ratio of noodles to broth varies by recipe, but the overall liquid level should resemble what is described below.
  4. The Golden Rule: DO NOT STIR PASTA/RICE: Finally, sprinkle your uncooked noodles or rice on the very top. DO NOT SUBMERGE OR STIR THEM INTO THE LIQUID! Gently press them down just enough so they are barely moistened by the liquid. This layering prevents starches from settling at the bottom and burning.

After cooking on high pressure, you’ll want to quick release the steam to prevent your noodles from becoming mushy. If you’re using rice, I typically allow a natural release for 2 minutes to give it time to fully fluff up inside the pot before performing a quick release.

Proper layering is essential for any Instant Pot casserole recipe.

This final layering step is absolutely critical for the success of any Instant Pot casserole recipe! Most failures, including the burn notice and horribly stuck starches at the bottom, occur because this direction has not been followed. Trust the process, and you’ll be rewarded with a perfect one-pot meal.

Can You Cook Frozen Casserole in a Pressure Cooker?

Generally, cooking an entire frozen casserole directly in a pressure cooker isn’t advisable for best results and food safety. However, you can certainly cook individual frozen components first. For instance, if you have frozen meat, you can pressure cook it until tender. Then, drain any drippings, shred the meat, and proceed with the casserole directions by layering the cooked meat on the bottom, followed by noodles, broth, and seasonings. This way, you get the benefit of cooking from frozen without compromising the casserole’s texture or triggering the burn notice. 😉

High-quality chicken broth adds depth of flavor to your Instant Pot casseroles.

We’ve also successfully used long-grain white rice instead of pasta in recipes like our Instant Pot hamburger casserole. While brown rice can be used, it significantly alters the cooking time, and we typically prefer white rice for its texture and quicker cooking. If you opt for brown rice, adjust your cooking times accordingly. You can easily swap out ground beef for your favorite cooked leftover protein in this type of recipe as well.

Equipment

  • 1 pressure cooker

Ingredients

  • 2
    c
    shredded pork ,
or shredded chicken or beef, pre-cooked (leftovers are great)
  • 2
    c
    rotini noodles,
    uncooked
  • 1
    tsp
    salt
  • 1/2
    tsp
    pepper
  • 1
    tsp
    onion powder
  • 1
    tsp
    garlic powder
  • 1
    tsp
    parsley
  • 4
    c
    chicken broth
  • 8
    oz
    cream cheese,
    room temp, cut into chunks
  • 3
    c
    shredded cheddar cheese
  • 1
    tbsp
    cornstarch,
optional, mixed with 1 tbsp cold water to thicken

Instructions

  1. Place shredded meat (pork, chicken, or beef) evenly across the bottom of the Instant Pot. Sprinkle uncooked noodles on top, followed by your seasonings (salt, pepper, onion powder, garlic powder, parsley).
  2. Carefully pour in the chicken broth. Close the lid and set the steam release valve to the sealing position. Pressure cook on HIGH for 5 minutes. Once cooking is complete, allow the pressure to naturally release for 2 minutes, then perform a quick release of any remaining pressure.
  3. Carefully open the lid. Stir the contents gently, then sprinkle in the shredded cheddar cheese. Stir again until the cheese has melted and is well incorporated.
  4. Set the Instant Pot to the “Sauté” function (on low if adjustable). Add the room temperature cream cheese chunks into the pot. Slowly stir until the cream cheese melts and creates a rich, creamy sauce for the casserole.
  5. If you desire a thicker sauce, prepare the cornstarch slurry by whisking 1 tablespoon of cornstarch with 1 tablespoon of cold water until smooth. When the casserole is bubbling on the sauté setting, add the slurry to the pot and stir constantly until the sauce thickens to your preference. Turn off the Instant Pot.
  6. Allow the casserole to sit for at least 5 minutes before serving. This resting period allows the sauce to thicken further and the flavors to meld beautifully.

How to Store and Reheat Instant Pot Casserole Leftovers

My aversion to food waste extends to my Instant Pot creations! If you’ve used meat that was previously cooked, saved, and then incorporated into this dish, I generally advise against re-saving it for another round of warming. While warming once is fine, repeated reheating can alter the meat’s texture and may not always be the safest practice. However, for casseroles made with freshly cooked or once-reheated meat, you can absolutely save leftovers.

Always wait until the casserole has cooled completely before storing. Transfer any remaining portions into an airtight container, or cover tightly with foil or plastic wrap, minimizing air exposure to prevent drying. These leftovers can be stored in the refrigerator for approximately 3 days. When you’re ready to enjoy them again, transfer the desired amount into a microwave-safe dish. Heat for 45-second intervals, stirring gently between each to rotate the ingredients and ensure even heating, especially in the center. Continue this process until the casserole is thoroughly warm. For an extra touch of deliciousness, sprinkle a bit more cheese on top during the final heating cycle to achieve that irresistible ooey-gooey texture.
