You can find fresh Hatch chiles at your local grocery store, like Albertsons, typically from the beginning of August through the end of September. The Hatch chile season is famously short, so when you see them, grab a bunch and freeze some to enjoy throughout the year!
Hatch chiles vary significantly in heat level. They are grown in the Hatch Valley, New Mexico, and different farms cultivate varieties ranging from mild to intensely hot. The hottest parts of any chile pepper are typically the inner membrane and seeds. If you prefer less heat, simply remove these parts. Even mild varieties, with their insides removed, still offer incredible flavor without much spice.
Beyond the Plate: Creative Ways to Use Hatch Green Chiles
While our recipe list offers a fantastic starting point, don’t hesitate to think outside the box! Almost any savory dish can benefit from the addition of these vibrant peppers. Do You Have to Peel Hatch Chiles?
The outer skins of Hatch chiles are quite thick and firm, often unpleasant to chew. For the best texture in most dishes, especially those where the chile is meant to blend smoothly, peeling is recommended. Roasting or blackening the skins over an open flame, under a broiler, or on a grill, then submerging them in ice water, typically makes the skins easy to slip off. Another effective method is placing the hot, roasted chiles into a paper bag for about 10-15 minutes, allowing them to steam, which loosens the skins, much like we do with roasted jalapenos.
Ultimately, whether to peel your Hatch chiles depends on your personal preference and the specific requirements of your recipe. While the inner flesh contains much of the delicious flavor, the texture is generally smoother and more desirable if the tough outer skin is removed. If you’re incorporating them into a smooth sauce, such as a copycat Qdoba salsa verde, removing the skin is highly advisable to achieve the desired consistency. This can be done through roasting, broiling, or blanching.
How to Blanch and Peel Hatch Chiles
Blanching is another excellent method for preparing Hatch chiles, particularly if you’re not keen on roasting or grilling. It helps loosen the skins efficiently. Here’s how to do it:
- Safety First: Always wear gloves, especially if you’re handling a spicy variety, to avoid skin irritation. You will regret it if you don’t!
- Blanching Method: For a quick and effective skin removal, you can also blanch peppers in boiling water for a few minutes.
- Peeling: Once blanched and cooled slightly, the skins can be removed by rubbing the peppers with a paper towel or gently scraping them off with a knife.
However, if you enjoy the rustic texture and the slight char of the pepper skin, you can certainly leave it on for certain dishes. This approach is often favored in more rustic preparations where the visual appeal and texture of the skin are welcomed. Ultimately, your choice to peel or not to peel should align with your culinary vision for the dish.
