Key Ingredients for Your Perfect Sweet Potato Cake

At its core, a sweet potato cake is a harmonious blend of mashed sweet potatoes and classic baking staples, infused with warming spices. For the sweet potato base, you have several excellent options: freshly cooked and mashed sweet potatoes (whether baked, boiled, or pressure-cooked), convenient drained canned yams, or even store-bought sweet potato puree, much like the pumpkin puree often used in seasonal baking. This versatility makes it easy to enjoy this cake anytime. We’ve used similar sweet potato hacks to create delightful treats like sweet potato bread and a variety of other delicious baked goods.

For the dry ingredients, cake flour is essential for achieving that characteristic light and tender crumb. Its lower protein content results in a delicate texture that is truly unmatched. If cake flour isn’t readily available, don’t fret! You can easily create a homemade cake flour substitute using all-purpose flour and cornstarch (details below).

To ensure your cake rises beautifully and achieves a wonderfully fluffy texture, both baking powder and baking soda are crucial leavening agents. Always check the expiration dates on these ingredients, as fresh leaveners are vital for a successful bake. Stale baking powder or soda will prevent your cake from rising properly, resulting in a dense texture.

The rich, inviting flavor of this cake comes from a carefully selected blend of spices and other key components:

  • 2 tsp Cinnamon: This warm and aromatic spice is the quintessential fall flavor, bringing a comforting depth to every bite.
  • 1 tsp Ginger: Dry, ground ginger adds a subtle warmth and zesty note that perfectly complements the sweetness of the potatoes.
  • Nutmeg and ground Cloves: These spices are non-negotiable for achieving that classic autumnal taste profile, adding complexity and a cozy aroma.
  • Vegetable oil and Applesauce: These liquid ingredients are key to ensuring the cake remains incredibly moist and tender. They contribute to a soft crumb without making the cake greasy. For alternatives, consider using mayonnaise or Greek yogurt, which also add moisture and richness.
  • 3/4 c Sugar and Brown Sugar: A combination of these two sugars provides balanced sweetness and a lovely caramel note from the brown sugar. While we haven’t tested it, you might explore sugar-free alternatives if dietary needs require.
  • Eggs: For optimal results in baked goods, always use large eggs at room temperature. This helps them emulsify better with the other ingredients, leading to a smoother batter and a finer cake texture.
  • Salt: A touch of salt is essential to balance the sweetness and enhance all the other flavors in the cake.

Preparing Your Sweet Potatoes: Fresh, Frozen, or Canned

The success of your sweet potato cake hinges on the proper preparation of your sweet potato base. No matter which form of sweet potato you choose, the goal is a smooth, cooled mash.

If you opt for frozen cubed sweet potatoes, simply place them in a microwave-safe bowl and heat for approximately 5 minutes, or until they are thoroughly tender. Once cooked, transfer them to a layer of paper towels to absorb any excess moisture; this prevents a watery batter. For those using canned yams, ensure they are completely drained and also pressed gently between paper towels to remove as much liquid as possible. Excess moisture can make your cake dense.

Alternatively, if you’re starting with fresh sweet potatoes, bake or boil them until very soft. Scoop out the tender flesh and mash it thoroughly. Regardless of your starting point, once the sweet potatoes are cooked and drained, mash them to a smooth, lump-free consistency. It’s crucial to allow the mashed sweet potatoes to cool completely before incorporating them into the cake batter. Adding warm or hot sweet potatoes can prematurely cook the eggs or melt the fats, affecting the cake’s final texture.

Elevate Your Cake: Delightful Optional Add-ins and Toppings

While delicious on its own, this sweet potato cake truly shines with a few thoughtful additions and decorative flourishes. These optional ingredients can enhance both the texture and visual appeal of your dessert, making it even more special.

For a beautiful and zesty topping, consider dried orange slices. You can prepare these at home in a similar fashion to how we make dried lemons, or purchase them pre-sugared online for convenience. Of course, these are entirely optional and can be omitted if you prefer. Beyond the garnish, you can fold any of the following into your cake batter to add delightful bursts of flavor and texture:

  • 1/2 c Pecans, chopped: These add a wonderful nutty crunch that complements the soft cake texture. Toasted pecans offer an even deeper flavor.
  • Cream cheese frosting: While listed here as an add-in, it’s typically a topping. If you’re looking for a shortcut, a tub of store-bought cream cheese frosting works well. For the ultimate homemade experience, click the link for our recipe.
  • Candied pecans, chopped: These provide a sweet, caramelized crunch that is truly decadent and pairs perfectly with the sweet potato flavors.
  • Dried cranberries: Their tartness offers a lovely contrast to the sweetness of the cake, adding a chewy texture and vibrant color.
  • 2 tbsp Sugar: A little extra sugar can be used to coat candied fruits or nuts before sprinkling on top, adding a glistening finish.
  • A hint of vanilla extract or orange zest can also be folded into the batter or frosting for an extra layer of aroma.

Simplified Sweet Potato Cake with a Cake Mix Base

We understand that sometimes you need a delicious dessert without all the fuss. That’s why we’re happy to share an excellent alternative for creating a delightful sweet potato cake using a boxed cake mix. This option significantly reduces preparation time while still delivering incredible flavor and a tender crumb. While a homemade cake is always a treat, a quality cake mix can be a fantastic shortcut, especially when you’re short on time or ingredients.

You can always enhance the flavor profile by adding a touch of vanilla extract, which deepens the overall sweetness and aroma of the cake. When it comes to toppings, feel free to get creative! Any type of dried fruits and nuts you enjoy can be used to add texture, complementary flavors, and a beautiful presentation. Think dried apricots, chopped dates, or even a sprinkle of toasted coconut flakes. These additions transform a simple cake into a visually appealing and more complex dessert. Equipment

  • 2 round cake pan 9″
  • 1 Bowl

Ingredients

Servings: 12

  • 2 cup yams, drained and mashed, or use leftover cooked and mashed sweet potatoes
  • 3 cup cake flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 4 large eggs
  • 1/2 cup pecans, chopped, optional
  • 1/4 cup candied pecans, chopped
  • 1/4 cup dried cranberries
  • 2 tbsp sugar
  • 3 cups cream cheese frosting

Instructions

  • If using frozen cubed sweet potatoes, place them in a bowl and microwave for about 5 minutes, or until they are soft. Set them on paper towels to dry. Canned yams should be thoroughly drained and placed on paper towels to absorb excess moisture. Alternatively, use the cooked flesh from baked fresh sweet potatoes. Mash to a smooth consistency and allow to cool completely.
  • Preheat your oven to 350 degrees Fahrenheit (175°C). If you are not using nonstick cake pans, line them with parchment paper for easy removal. In a medium bowl, combine the flour, spices (cinnamon, ginger, nutmeg, cloves), salt, baking soda, and baking powder. Whisk these dry ingredients together thoroughly and set aside. In a separate large bowl, whisk together the vegetable oil, applesauce, granulated sugar, and brown sugar until well combined.
  • Into the oil and sugar mixture, whisk the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the cooled, mashed sweet potatoes and mix until just combined. Gradually add the dry flour mixture to the wet ingredients, incorporating one-third of the flour at a time. Mix gently until the batter is just combined; be careful not to overmix, which can lead to a tough cake.
  • Gently stir in the chopped pecans (if using). Divide the cake batter evenly between the two 9-inch prepared cake pans. Bake for approximately 27-30 minutes, or until a wooden toothpick inserted into the center of the cake comes out clean. Once baked, allow the cakes to cool in the pans for about 10-15 minutes before inverting them onto a wire rack to cool completely. It is essential for the cake to be completely cool before frosting.
  • In a medium bowl, beat the softened cream cheese and room-temperature butter with an electric mixer until the mixture is light and fluffy. Gradually add the powdered sugar, beating until the frosting is smooth and lump-free. Stir in the orange juice and vanilla extract (if using) and beat until all ingredients are well combined and the frosting is creamy.
  • To assemble, place the first cake layer, flat side up, in the center of your chosen cake plate. For a neat finish, tuck small strips of parchment paper underneath the edges of the cake to catch any excess frosting and keep your platter clean.
  • Spread approximately ¾ cup of the cream cheese frosting evenly over the top of the first cake layer. Carefully place the second cake layer on top, flat side down, ensuring it is aligned perfectly with the first layer. Use the remaining frosting to generously cover the top and sides of the entire cake, creating a smooth and even coating.
  • In a small bowl, combine the additional sugar, candied pecans, dried cranberries, and chopped dried orange (if using). Mix these together until they are well coated. Using a spoon, carefully scoop up the mix, allowing any excess sugar to fall away, and sprinkle it decoratively across the top of the frosted cake.
  • For the best results and to allow the frosting to set, place the finished cake in the refrigerator to chill for an hour or two. Before serving, let the cake come to room temperature to ensure optimal flavor and texture. Store any leftover cake, tightly wrapped in plastic wrap, in the refrigerator for up to 3-4 days.

Achieving a Tender Crumb: How to Make Cake Flour at Home

Cake flour is a baker’s secret weapon for creating incredibly tender, delicate cakes with a fine crumb. Its magic lies in its lower protein content compared to standard all-purpose flour. If you don’t have cake flour in your pantry, don’t let that stop your baking plans! You can easily create a perfectly suitable substitute right in your own kitchen using simple ingredients: all-purpose flour and cornstarch. Here’s a detailed guide on how to make cake flour for your sweet potato cake and other baked goods.

The process is remarkably straightforward. For every cup of cake flour required by your recipe, you will start with 1 cup of all-purpose flour. From this cup, remove precisely 2 tablespoons of all-purpose flour. Then, replace those 2 tablespoons with 2 tablespoons of cornstarch. For example, if your recipe calls for 3 cups of cake flour, you would measure out 3 cups of all-purpose flour, remove 6 tablespoons of that flour, and then add 6 tablespoons of cornstarch back into the flour mixture.

Once you have your flour and cornstarch measured, the next crucial step is sifting. Place this mixture into a fine-mesh sieve or a dedicated flour sifter. Sift the mixture several times (at least 2-3 times) into a clean, dry bowl. This sifting action is vital for two reasons: it thoroughly combines the cornstarch with the all-purpose flour, ensuring even distribution, and it aerates the flour, which contributes to a lighter cake texture. The goal is a uniform, powdery blend where the cornstarch is completely incorporated.

Once you’ve prepared your homemade cake flour, it’s ready to use immediately in your recipe. If you find yourself with any leftover substitute, you can store it in an airtight container in your pantry for future baking endeavors. Just be sure to clearly label it as “homemade cake flour” to avoid any confusion with regular all-purpose flour. This simple trick allows you to achieve the soft, delicate texture characteristic of cakes made with true cake flour, giving your sweet potato cake that coveted tender crumb.

Now that you have all the necessary ingredients and preparation tips, you’re well-equipped to bake this sensational sweet potato cake. Remember, the lower protein content of cake flour is what helps create a tender crumb in cakes, making it an invaluable ingredient when you desire a truly soft and delicate texture in your baked creations.

If you often find yourself with extra sweet potatoes, remember their versatility! You can transform them into many other delightful treats, such as simple sweet potatoes with cinnamon as a side dessert, a classic sweet potato pie, or even a batch of our delicious sweet potato muffins mentioned earlier. With these ideas, your sweet potatoes will never go to waste! Now, jump to the recipe card above and let us know what you think of this wonderful sweet potato cake!
