Instant Pot Chicken Cacciatore offers a deliciously simple and flavorful meal solution for busy weeknights. This recipe leverages the convenience of jarred sauce with the efficiency of your pressure cooker to create a moist, tender chicken dish packed with robust Italian flavors. Perfect for a low-carb dinner or served over a bed of fluffy rice, it’s a hearty and satisfying comfort food that quickly becomes a family favorite.

Discovering incredibly easy and healthy Instant Pot recipes has transformed my dinner routine, and this chicken cacciatore is a prime example. Since acquiring my first pressure cooker a few Christmases ago, I’ve been continuously impressed by its ability to deliver full-flavored, nutritious meals in under 30 minutes. The magic of pressure cooking lies in its speed and efficiency, making it an indispensable tool for anyone looking to create delicious food without spending hours in the kitchen.
Effortless Instant Pot Chicken Cacciatore with Jar Sauce
If you haven’t yet experienced the wonders of an electric pressure cooker, I cannot recommend it enough. These versatile appliances, whether an Instant Pot, Ninja Foodi, or Crockpot Express, operate on the same principle of high-pressure cooking, ensuring your meals are cooked quickly and evenly. This recipe is designed to work seamlessly across all models that feature a high-pressure setting, making it accessible to a wide range of home cooks.
One of the beauties of this recipe is its flexibility with ingredients. While I often use boneless, skinless chicken breasts for their lean profile and quick cooking time, chicken thighs are an excellent alternative, offering a richer flavor and even greater tenderness. Both work wonderfully, especially when you find them on sale, proving that a delicious meal doesn’t have to break the bank. We’ve managed to feed our family of six for under $11 with this recipe, a testament to its budget-friendly nature.
Adapting to Your Pressure Cooker: Instant Pot or Ninja Foodi
Whether you own an Instant Pot, a Ninja Foodi, or a Crockpot Express, the core steps for this chicken cacciatore remain the same. The high-pressure setting on any of these devices will yield perfectly fall-apart, fork-tender chicken and vegetables, infused with the rich flavors of the sauce. This cross-compatibility makes it a fantastic go-to recipe for any pressure cooker enthusiast.
Cooking Chicken Cacciatore with Frozen Chicken
Life happens, and sometimes you forget to thaw your chicken. Fortunately, your Instant Pot comes to the rescue! Cooking frozen chicken in the pressure cooker is absolutely possible and yields excellent results, though a slight adjustment to the cooking time is necessary. For best results with frozen chicken breasts, ensure they are separated and cut into smaller, more manageable pieces before adding them to the pot. Increase the high-pressure cook time to 12 minutes, followed by a 3-minute natural pressure release. Keep in mind that this method might result in slightly softer vegetables, so slicing them a bit thicker can help maintain some texture.

My goal is always to make meal preparation as straightforward as possible. While making your own spaghetti sauce from scratch is a commendable endeavor, a quality jarred sauce offers unparalleled convenience, especially after a long day. Brands like Ragu, or whatever is on sale, work perfectly well, providing a robust base for your cacciatore without compromising flavor. This approach is also fantastic for other quick meals like Instant Pot spaghetti.
For even faster cooking and easier eating, especially for little ones, I typically dice the chicken into bite-sized pieces. Small, whole chicken breasts would require closer to 12 minutes of cooking, whereas bite-sized pieces are done in just 3-4 minutes. The choice is yours, but dicing certainly speeds up the process and ensures even cooking.
- Speed and Efficiency: Instant Pot chicken recipes drastically cut down cooking time. While a traditional Crockpot chicken cacciatore can simmer for 5 hours, this pressure cooker version is ready in approximately 15 minutes of active cooking and pressure building/releasing time.
- Intense Flavor Infusion: Pressure cooking locks in moisture and infuses the meat deeply with the sauce and seasonings, resulting in incredibly flavorful and tender chicken.
- Hands-Off Cooking: Once the lid is locked and the timer set, you can step away from the kitchen and let the Instant Pot do all the work, perfect for multitasking.
- One-Pot Meal: Like our pressure cooker chicken and rice, this recipe allows you to cook your protein, vegetables, and sauce all together in one pot, minimizing cleanup and maximizing convenience.

Key Ingredients for Your Instant Pot Chicken Cacciatore
- Chicken Breasts: Boneless, skinless, and cut into bite-sized pieces are ideal for quick cooking. Chicken thighs can also be used for a richer flavor.
- Fresh chicken is generally recommended for optimal texture and consistent cooking times.
- If using small, frozen chicken breasts, increase the cook time to 12 minutes with a 3-minute natural release.
- Onion: Sliced thick for a pleasant texture after cooking. You can use white, yellow, or red onion.
- Bell Peppers: Any color (red, green, yellow, orange) adds vibrant color and a sweet, fresh crunch. Slice them thick to prevent them from becoming too soft.
- Chili Powder: Adjust to your taste for a hint of warmth and depth.
- Garlic Salt: A fantastic all-in-one seasoning that boosts flavor.
- Jar of Spaghetti Sauce: A 24 oz jar of your favorite pasta sauce makes this recipe incredibly easy. Alternatively, you can create a similar base with tomato sauce, Italian seasoning, and diced tomatoes.
- Optional Add-ins: For an enhanced cacciatore experience, consider quartered mushrooms, a pinch of red pepper flakes for a spicy kick, or briny Kalamata olives.
Flavorful Substitutions and Customizations
The beauty of this recipe lies in its adaptability. While a quality jarred sauce forms the backbone of its rich flavor (because I’m all about easy meals!), you can absolutely use a homemade spaghetti sauce if you prefer. The combination of the sauce, carefully selected seasonings, and the natural sweetness of bell peppers creates a dinner idea that consistently receives rave reviews. Any meal that our family loves and takes under 30 minutes in the pressure cooker is a significant victory in our household. This Instant Pot Chicken Cacciatore is undoubtedly one of those winning dishes!

Below is a simplified, step-by-step guide to making this delightful dish. A comprehensive recipe card with additional tips can be found further down this page.
Simplified Method: How to Make Chicken Cacciatore in a Pressure Cooker
- Begin by pouring half of your jarred spaghetti sauce into the bottom of your pressure cooker pot. Add your chicken, cut into small, even bite-sized pieces, on top of the sauce.
- Pour the remaining spaghetti sauce over the chicken. For extra flavor and to ensure no sauce goes to waste, add 1/2 cup of water to the empty sauce jar, secure the lid, and shake vigorously. Pour this seasoned water over the chicken and sauce in the pot.
- Prepare your vegetables by cutting the bell peppers and onion into strips. The thickness of your slices will determine their final texture – thicker for firmer vegetables, thinner for softer. Add these prepared vegetables to the pressure cooker.
- Season your dish generously with chili powder and garlic salt. Feel free to add any other preferred Italian herbs or spices at this stage to customize the flavor profile.
- Secure the lid on your Instant Pot (or other pressure cooker), set the vent to sealing, and select the Manual or Pressure Cook setting on high pressure. Set the timer for just 3 minutes.
- Once the cooking cycle is complete, allow the pressure to naturally release for 2 minutes before performing a quick release of any remaining pressure. Carefully remove the lid, stirring gently.
- Before serving, always check the chicken to ensure it is thoroughly cooked through. If the chicken was initially cut into bite-sized pieces, 3 minutes under pressure is typically sufficient for perfect doneness. We love serving this over rice, but other options are excellent too!
Allowing a brief natural pressure release (NPR) helps maintain the juiciness of the chicken. After the 2-minute NPR, proceed with a quick release (QR) and then carefully open the lid away from your face. A sprinkle of freshly shredded Parmesan cheese on top of your cacciatore, whether served over white or brown rice, adds a delicious finishing touch.

What to Serve with Chicken Cacciatore
- For a delicious low-carb dinner, serve the chicken cacciatore directly onto a plate, perhaps with a side salad.
- Pair it with an easy Instant Pot white rice or brown rice, allowing the flavorful sauce to soak into the grains.
- Serve over your favorite egg noodles or pasta for a more classic, hearty Italian-American meal.
- Creamy polenta or mashed potatoes also make excellent accompaniments, soaking up the rich cacciatore sauce beautifully.
Remember, dicing the chicken into bite-sized pieces is key for even cooking and tender results. Feel free to season the chicken with additional herbs, black pepper, and salt before adding it to the pot if desired. This small step can further enhance the overall flavor profile of your dish.
A recipe is truly a “best recipe win” in my book when everyone at the table enjoys it, it’s simple to prepare, and it’s affordable enough to feed the whole family. This Instant Pot Chicken Cacciatore ticks all those boxes, often leaving enough for a satisfying lunch the next day. As for the vegetables, you can slice the onions and bell peppers thinly if you prefer them very soft, or thicker, as I do, to retain a bit more firmness and crunch.

Understanding “Hunter’s Style” (Cacciatore)
The term “cacciatore” is Italian for “hunter.” Hence, “chicken cacciatore” translates to “hunter’s style chicken.” Historically, this dish would have been prepared with game meat and whatever vegetables and herbs a hunter might find. The classic preparation typically involves a savory medley of tomatoes, onions, mushrooms, and herbs, often with a splash of wine to deepen the flavor profile. While our recipe uses readily available ingredients, you can certainly add a touch of red wine to the sauce or experiment with your own homemade sauce to capture that traditional hunter’s essence.

Storing Leftover Chicken Cacciatore
Proper storage is key to enjoying your leftovers safely. Chicken cacciatore, when stored correctly, typically lasts 3-4 days in the refrigerator. Ensure the dish has cooled completely to room temperature before transferring it to an airtight plastic container or a freezer-safe bag. This prevents condensation and helps maintain freshness. For longer storage, it can be frozen for up to 2-3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave until thoroughly warm.
The Italian Origins of Chicken Cacciatore
As its name suggests, “cacciatore” meaning “hunter” in Italian, this beloved dish has its roots deeply embedded in Italian culinary tradition. It’s believed that early Italian hunters were among the first to prepare this rustic, hearty meal, using whatever ingredients were available to them in the wild. While the fundamental concept of chicken cooked in a savory sauce with vegetables remains constant, modern interpretations vary widely. You’ll find many delightful twists on the classic recipe in restaurants worldwide, each chef adding their unique touch while preserving the comforting essence of this timeless Italian staple.
