Ingredient Notes
I most often use medium-sized organic chicken breasts for the best texture. Boneless, skinless breasts are straightforward and shred beautifully after slow cooking.
To achieve a smooth, velvety sauce, combine one can of cream of chicken soup with softened cream cheese and cubed Velveeta. For a slightly different profile you can substitute cream of mushroom or a herb-flavored condensed soup.
For the tomato and chile element I prefer Rotel because it adds flavor without thinning the sauce too much. Canned diced tomatoes with chiles may be used instead; just drain some of the liquid if you want a thicker sauce.
Use whole milk or 2% for a creamier result. If you need a dairy-free option, plain cashew milk offers the thickest texture among common alternatives.
Noodle shape is up to you. Traditional spaghetti works fine, but penne or other short pasta shapes are often easier for children to eat and can reduce table mess.
Seasonings are simple: a blend of Italian seasoning, onion powder, garlic powder and salt is all you need to enhance the flavors without overpowering the creaminess.

Do you need to boil the noodles?
Yes. Cooking the pasta directly in the slow cooker usually produces an uneven texture and causes the noodles to clump. Boil the noodles separately until al dente, drain them well, then fold them into the finished sauce right before serving.
How long to cook Chicken Spaghetti in the Crockpot
Cook the chicken on low for about 3½ to 4 hours. This range gives the chicken enough time to become tender and easy to shred with two forks. Thicker or larger pieces may need a bit more time. I prefer to err on the side of longer cooking so the chicken is fall-apart tender and the flavors meld.
Can you cook this on high?
Technically yes, but it’s not recommended. High heat can make the meat less tender and can sometimes affect the texture of the cheeses. Slow, gentle cooking on low yields the best, creamiest result.

This recipe is hearty enough to serve on its own, but if you’d like a side consider dinner rolls or a fresh green salad. It also pairs well with simple steamed vegetables for added color and nutrition.

Ingredients
- 1 can cream of chicken soup (or substitute cream of mushroom or cream of chicken with herbs)
- 1 1/4 cup milk (whole or 2% preferred)
- 1 can Rotel, 10 oz (or drained diced tomatoes with chiles)
- 4 oz cream cheese, softened and cubed
- 4 oz Velveeta, cubed
- 1 tbsp Italian seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- 1.5–2 lbs chicken breasts, boneless and skinless (medium size)
- 1 1/2 cups shredded cheese (Colby Jack suggested)
- 12 oz spaghetti noodles, boiled separately and drained
Instructions
- In a 6-quart slow cooker combine the cream of chicken soup, milk, Rotel, cubed cream cheese, cubed Velveeta and all seasonings. Stir until the mixture is well combined.
- Nestle the chicken breasts into the sauce, pressing them down so they are coated. Cover and cook on low for 3½ to 4 hours, or until the chicken is very tender and shreds easily with two forks. Remove the chicken and set it aside briefly.
- Stir the sauce in the slow cooker and sprinkle the shredded cheese on top. Cover and turn the slow cooker off to allow residual heat to melt the cheese.
- Slice or shred the cooked chicken and return it to the slow cooker. In a separate pot, boil the spaghetti until al dente, then drain well.
- Add the drained pasta to the slow cooker and gently fold it into the sauce until the noodles are evenly coated. Serve immediately while hot.
