  • 1 lb ground beef, or spicy ground sausage, ground turkey, or precooked shredded chicken or pork
  • 1 packet taco seasoning, 2 tbsp
  • 1 can green chiles, diced, 4 oz.
  • 4 cup cheese, shredded (cheddar, Monterey Jack, or Mexican blend)
  • 12 medium tortillas (flour or corn)
  • 1 can enchilada sauce, 28 oz. (mild or spicy, to taste)
  • 1/2 small onion, diced (optional)

Instructions

  1. Turn Instant Pot to “Sauté” function. Add ground beef and taco seasoning. Break apart the meat and cook until no longer pink. If using diced onions, add them with the beef to soften. Drain any excess grease when done.
