Instant Pot Lasagna Soup with Jar Sauce: The Ultimate Weeknight Solution

Imagine all the rich, savory layers of your favorite Italian lasagna, but instead of hours of layering and baking, it’s simmered to perfection in a single pot. That’s precisely what our Instant Pot lasagna soup offers! While it’s fundamentally a lasagna, we’re reimagining it with different pasta shapes and ground meats, resulting in a hearty soup that’s incredibly easy to enjoy. This recipe is wonderfully versatile, compatible with popular electric pressure cookers like the Ninja Foodi or Crockpot Express. As long as your appliance boasts a sauté and high-pressure function, you’re all set for a delicious meal.

One common challenge with traditional lasagna, especially when serving children, is the wide, slippery noodles. They can be tricky for little hands and often make for a messy meal. Plus, the pre-cooking and delicate layering of hot noodles can be quite the hassle for any cook. This lazy lasagna soup completely eliminates those frustrations! You simply brown your chosen meat, toss in the remaining ingredients (minus the cheese for now), and let your pressure cooker work its magic. It’s truly the easiest way to savor the classic flavors you love without any of the fuss.

Ninja Foodi Option: Maximizing Versatility

For those utilizing a Ninja Foodi, this recipe is perfectly adaptable. I often opt for bow-tie pasta noodles, especially if I find them on sale, as their smaller size is ideal for soup and adds a charming touch. While the choice of noodle shape is entirely yours, smaller varieties tend to integrate better into a soup format. To achieve this delightful lasagna soup in just 8 minutes of pressure cooking time, a reliable electric pressure cooker is indispensable. If you haven’t yet invested in one, I wholeheartedly recommend it for its incredible efficiency and versatility in the kitchen.

My journey into pressure cooking began many years ago, long before the internet was teeming with recipes. My trusty multi-cooker, like the one pictured, was an early purchase, prompting me to develop my own recipes from scratch. This Instant Pot lasagna soup, alongside our beloved Instant Pot spaghetti, were among the very first creations I shared on the blog. Even now, years later, these recipes remain staples in our household, a testament to their enduring appeal and ease.

One of the standout features of a 7-in-1 multi-cooker pressure cooker is its integrated sauté function. This allows you to brown your meat directly in the pot, eliminating the need for extra pans and reducing cleanup significantly. Before owning one, I had to dirty a separate pan on the stovetop for this step. The ability to complete the entire cooking process in one pot truly streamlines meal preparation, making it an invaluable tool for busy home cooks.

Master the Ingredients for Perfect Lasagna Soup

Crafting the perfect Instant Pot lasagna soup begins with selecting quality ingredients. Here’s a detailed look at what you’ll need and some tips for each component:

The Heart of the Soup: Choosing Your Meat

For the meat base, you’ll want a ground variety. While ground beef is a classic choice, we find that spicy ground Italian sausage truly elevates this dish, imparting a rich, savory depth and a subtle kick. Brands like Jimmy Dean are excellent for this. If you’re aiming for a lower-fat option, ground chicken or turkey can be substituted, though be aware they may not contribute as much inherent flavor to the soup. If using leaner meats, you might want to add a bit more seasoning.

Aromatic Foundations: Onions and Tomatoes

I typically incorporate some finely diced onions into the mix, usually yellow or white varieties. While not strictly essential, they add a wonderful aromatic foundation to the soup. For texture and bursts of flavor in every spoonful, I prefer petite diced tomatoes, ensuring delightful little chunks throughout the dish. Canned diced tomatoes work perfectly for this.

The Flavorful Liquid Base: Broth and Jarred Sauce

To achieve that perfect soupy consistency and cook the noodles, you’ll need ample liquid. Chicken broth or beef broth are your best bets, offering far more flavor than plain water. The spaghetti sauce, whether it’s a meat sauce or a marinara, also plays a crucial role in deepening the overall taste profile. Using a quality jarred sauce simplifies the process immensely without compromising on authentic Italian flavors.

The Pasta: Bite-Sized Bliss

The noodles are added uncooked directly into the pot. The beauty of this deconstructed lasagna is the flexibility with pasta shapes. Smaller, bite-sized options like shells, penne, or bow-tie pasta work wonderfully. You can even break traditional lasagna sheets into smaller pieces. The key is to choose a shape that’s easy to eat in a soup format.

The Creamy Finish: Cheese and Seasonings

To capture that authentic lasagna experience, we finish with cheese. Shredded mozzarella cheese is essential for that signature melt. For an extra layer of creamy richness, I often add a dollop of ricotta cheese to the top of each serving, though it’s perfectly delicious without it. A blend of salt, oregano, and other Italian seasonings (like basil and garlic powder) brings all the flavors together.

Lasagna Soup with Frozen Ground Beef: A Time-Saving Trick

Forgot to thaw your meat? No problem! This recipe is incredibly forgiving. If your ground meat is still frozen solid, you can still proceed. I have a detailed guide on how to safely thaw Instant Pot frozen ground beef. Once thawed and drained of any excess liquid, simply follow the initial steps of the recipe, browning the meat in the Instant Pot until no pink remains, then continue as directed.

Customizing Your Instant Pot Lasagna Soup

One of the joys of cooking is the ability to customize dishes to your liking. While I’ve used larger noodles in some iterations, I generally find that smaller pasta shapes integrate better into a soup. Feel free to use any brand or style of pasta you prefer. When using any pressure cooker, the high-pressure function with a quick release is key for perfectly cooked noodles. For Ninja Foodi owners, an exciting variation is to use the air crisp mode at the very end with a sprinkle of extra cheese on top, creating a delightful golden, bubbly crust reminiscent of baked lasagna.

Dairy-Free Option for Sensitive Stomachs

For those with dairy sensitivities, adapting this recipe is surprisingly simple. I’ve often prepared a dairy-free version for my husband, and I’m happy to report that lactose-free dairy products are now widely available at most grocery stores. The result is remarkably delicious, and often, even the kids can’t detect the difference! Simply swap out the mozzarella and ricotta for their lactose-free or plant-based counterparts.

For optimal cooking and easier cleanup, I highly recommend using a non-stick inner pot with your pressure cooker. This is beneficial for all your pressure cooker recipes, as it helps prevent food from sticking during the sauté process and reduces the frequency with which you might need to deglaze your Instant Pot.

Equipment

  • 1 pressure cooker

Ingredients

  • 1 pound ground beef, or spicy ground Italian sausage (Jimmy Dean is recommended), or ground turkey
  • 1/2 medium onion, diced
  • 1 cup diced tomatoes, canned
  • 40 oz beef broth, or chicken broth (use less for a thicker soup)
  • 1 jar spaghetti sauce, (24 oz)
  • 1.5 – 2 cups noodles, uncooked (bow-tie, penne, or other small pasta shapes work well)
  • 1 pinch salt
  • 1 pinch oregano
  • 1 cup mozzarella cheese, for topping
  • 1 cup ricotta cheese, optional, but adds a lovely creamy touch

Instructions

  1. Set your Instant Pot to “Sauté” mode. Add a drizzle of olive oil, then add the ground sausage (or beef) and diced onions. Cook until the ground meat is no longer pink, breaking it up with a spoon. Once browned, press the “Cancel” button to turn off the Sauté function.
  2. Pour in all remaining ingredients EXCEPT the noodles and cheeses. Stir everything together well. Then, gently pour the uncooked noodles on top of the mixture. Lightly submerge the noodles into the liquid using your spoon, but DO NOT STIR them into the sauce. This helps prevent a “Burn” notice.
  3. Secure the lid on your Instant Pot, ensuring the vent is set to “Sealing.” Select “Manual” (or “Pressure Cook” on newer models) and set to “High Pressure” for 3 minutes.
  4. Once the cooking cycle is complete, perform a quick release of the pressure by carefully moving the vent to the “Venting” position. Once the pin drops, remove the lid.
  5. Give the soup a gentle stir. Ladle into bowls and top each serving with a small spoonful of ricotta cheese (if using) and a generous pinch of shredded mozzarella cheese. Serve hot and enjoy!

Versatile Cooking: Stovetop Lasagna Soup

While the Instant Pot offers unparalleled speed, our Instant Pot lasagna soup recipe can also be adapted for stovetop cooking. If you prefer to make One Pot Lasagna Soup on the stovetop, you can find detailed directions here. This method takes a bit longer than the pressure cooker but is still quite efficient. It’s an excellent option if you’re doubling the recipe to feed a larger crowd, as a large stockpot can accommodate more volume.

Lazy Lasagna Soup: Slow Cooker Method

For those days when you want dinner ready with minimal effort, you can also transform this into a slow cooker meal. First, brown your chosen ground meat and onions on the sauté setting (if your slow cooker has one) or in a separate pan. Add all ingredients, excluding the noodles and cheeses, to your slow cooker. Cook on low for about 6 hours. Approximately 30 minutes before you plan to serve, stir in the noodles, ensuring they are submerged in the liquid. Increase the heat to high to ensure the pasta cooks through. Once done, ladle into bowls and top with your desired cheeses!

This slow cooker version is similar in spirit to our Crockpot lasagna, but with a higher liquid content, making it a true soup. It uses many of the same delicious ingredients, offering that beloved Italian flavor profile. You can either use small pasta shapes for a traditional soup or break traditional lasagna noodles for a thicker, more “deconstructed” lasagna consistency.

Frequently Asked Questions About Instant Pot Lasagna Soup

Can you use ground beef instead of ground sausage to make lasagna soup?

Absolutely! While ground beef works perfectly well, I must emphatically state that spicy ground Italian sausage, particularly brands like Jimmy Dean, truly offers the BEST flavor profile for this soup. It infuses the dish with an incredible depth of taste, often requiring fewer additional seasonings. Furthermore, it adds a delightful subtle heat, making it a consistently popular meal choice.

How many calories are in lasagna soup?

The calorie count for lasagna soup will naturally vary depending on your serving size and the specific ingredients used. Our nutritional information suggests approximately 228 kcal per 3-ounce serving. If you modify ingredients, such as using leaner meat or adjusting cheese quantities, the calorie count will change accordingly. Generally, compared to traditional baked lasagna, soup versions typically have fewer calories overall due to the increased liquid content and often less cheese and oil.

What kind of noodles work best in Instant Pot lasagna soup?

For Instant Pot lasagna soup, smaller, bite-sized pasta shapes are ideal. Penne, shells, bow-tie (farfalle), or rotini all work wonderfully as they cook evenly and are easy to scoop and eat in a soup. You can also break traditional lasagna noodles into 1-2 inch pieces if you prefer that specific noodle texture. The key is to avoid large, flat noodles that might clump together or cook unevenly in the pressure cooker.

Can I make Instant Pot lasagna soup ahead of time?

Yes, you can absolutely make Instant Pot lasagna soup ahead of time. It often tastes even better the next day as the flavors meld further. Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. When reheating, you might want to add a splash of extra broth or water, as the noodles tend to absorb liquid as they sit. Reheat gently on the stovetop or in the microwave until warmed through.
