  • 1/4 tsp tomato paste

Instructions

  • Begin by layering your ingredients in the Instant Pot. Place the diced onion and bell pepper at the bottom, followed by the cubed sweet potatoes on top. Evenly pour the drained and rinsed beans over the sweet potatoes. Next, add the chicken pieces (if using) and dot with the minced garlic.
  • Evenly sprinkle the chili powder, ground coriander, salt, and pepper over the chicken and garlic. Gently pour the chicken broth (or vegetable broth) over the seasonings, allowing it to naturally seep down through the vegetables.
