This one-pot Instant Pot casserole isn’t just easy; it’s a culinary chameleon! While chicken and broccoli rice is a classic combination, this recipe is wonderfully adaptable. Don’t have chicken? No problem! Use diced ham, turkey, or even sausage. Feeling adventurous? Add different vegetables or experiment with various cheese blends. This adaptability is precisely why Instant Pot recipes have become a staple in my kitchen, offering quick, flavorful meals with minimal fuss. It’s the perfect solution for busy weeknights when you want something homemade and hearty without spending hours over the stove.

One of the greatest advantages of using a pressure cooker like an Instant Pot for dishes like this chicken broccoli rice is the ability to cook everything together simultaneously. This means less cleanup, fewer pots and pans, and more time for you to enjoy your evening. Whether you own an Instant Pot, a Crockpot Express, or a Ninja Foodi (using its pressure cooking lid), this recipe is designed to work seamlessly. As long as your appliance features a sauté function and high-pressure cooking, you’re all set to create this cheesy masterpiece.

Many of my favorite recipes, including this one, come from a place of creativity and using what’s on hand. Just like my popular Instant Pot enchilada rice, this dish was born from a desire to utilize leftovers effectively. One week, I had some leftover rotisserie chicken breasts, and the next, it was diced ham. Each iteration resulted in a fantastic meal, proving just how forgiving and versatile this pressure cooker casserole truly is. This approach to cooking not only minimizes food waste but also encourages culinary exploration, making every meal a unique and delicious adventure.

Essential Ingredients for Your Instant Pot Chicken Broccoli Rice

Crafting the perfect Instant Pot Chicken Broccoli Rice starts with selecting high-quality ingredients. Here’s a detailed look at what you’ll need to create this comforting one-pot meal:

  • Protein Power: For the meat, we typically recommend diced, precooked chicken. Leftover rotisserie chicken is an absolute game-changer here, as it’s already cooked, flavorful, and incredibly convenient. Simply shred or cut it into bite-sized pieces. If you’re starting with raw chicken, you’ll need a bit of olive oil to sauté it with onions until it’s no longer pink, building a foundational layer of flavor before the pressure cooking begins. Alternatively, other precooked meats like ham or turkey work wonderfully.
  • The Grains: This recipe is designed for uncooked white rice. It cooks perfectly under pressure, absorbing all the delicious broth and flavors. It is crucial to avoid using “Minute Instant Rice” as its quick-cooking nature will result in a mushy texture when subjected to the longer pressure cooking time. Stick to regular white rice for the ideal consistency.
  • Flavorful Liquid: Instead of plain water, we highly recommend using chicken broth. Broth adds a significant depth of flavor to the rice, making the entire dish more savory and satisfying. You can use homemade or store-bought broth, depending on your preference and availability.
  • Green Goodness: Fresh broccoli florets are essential for their vibrant color, texture, and nutritional boost. For optimal integration and a melt-in-your-mouth texture, cut the broccoli into really small pieces. If you prefer chunkier, more distinct florets, you can keep them slightly larger. The key is consistent sizing for even cooking.
  • Cheesy Indulgence: A generous amount of shredded cheddar cheese is what elevates this dish to true comfort food status. We stir a good portion into the hot rice after pressure cooking and then sprinkle more on top to melt into a gooey, irresistible layer. For those seeking a dairy-free alternative, brands like Daiya offer excellent substitutes that melt beautifully.
  • Aromatic Foundation: Don’t underestimate the power of aromatics! A small diced onion sautéed in butter creates a fragrant base. Adding minced garlic in the final minute of sautéing intensifies this aroma and adds a pungent kick that complements the other ingredients perfectly.
  • Season to Taste: Simple yet effective seasonings like salt and pepper are all you truly need. Remember to start with a modest amount and adjust to your taste preferences, especially since chicken broth and precooked meats can already contribute sodium.

Customizing Your Cheesy Instant Pot Casserole

The beauty of this Instant Pot Chicken Broccoli Rice recipe lies in its incredible flexibility. It’s a fantastic canvas for using up ingredients you already have, making it a sustainable and economical choice for your kitchen. Here are some exciting ways you can customize this dish:

Protein Power-Ups: Beyond Chicken

While chicken is a classic choice, feel free to swap it out for other delicious proteins:

  • Ham: As showcased in some of my kitchen experiments, diced leftover ham works exceptionally well, adding a salty, savory depth that perfectly complements the cheesy rice and broccoli. It’s a great way to repurpose holiday leftovers or a Sunday ham.
  • Turkey: Post-holiday leftover turkey is another excellent substitute. Dice it up and add it in for a leaner, yet equally flavorful, option.
  • Sausage: Diced sausage links, especially precooked varieties, are fantastic for adding robust flavor and a different texture. If you enjoy a bit of heat, try andouille sausage. For a milder, more traditional taste, kielbasa is an excellent choice. Since these are often already seasoned, they add a lot of character with minimal extra effort.

Vegetable Ventures: Adding More Greens

While broccoli is the star, don’t hesitate to incorporate other vegetables:

  • Corn: Fresh kernels cut off the cob add a touch of sweetness and a pop of color.
  • Peas: Frozen peas, added at the end, warm up quickly and blend seamlessly into the dish.
  • Carrots: Finely diced carrots can be sautéed with the onions to add sweetness and nutrients.
  • Bell Peppers: Diced bell peppers of any color will add freshness and a slight crunch.

If using frozen vegetables, ensure they are thawed and well-drained to avoid adding excess liquid to the pot, which could make the rice mushy.

Seasoning Sensations: Tailor to Your Taste

The base recipe uses simple salt and pepper, but you can easily elevate the flavor profile:

  • Garlic Powder/Onion Powder: For an extra layer of savory depth.
  • Paprika: A smoky or sweet paprika can add warmth and color.
  • Italian Seasoning: A blend of herbs for an aromatic touch.
  • Spicy Kick: A pinch of red pepper flakes or a dash of hot sauce can introduce a delightful warmth.

Always season gradually, tasting as you go, especially if using ingredients that are already salty.

Cheese Choices: A Melty Wonderland

Cheddar is classic, but exploring other cheeses can yield delicious results:

  • Sharp Cheddar: For a more pronounced cheesy flavor.
  • Monterey Jack: Adds a milder, meltier quality.
  • Spicy Jack: If you love a little zing, spicy jack cheese is a fantastic addition.
  • A Blend: A combination of cheddar and a milder cheese like mozzarella or Colby can offer both flavor and incredible melt.
  • Dairy-Free Options: As mentioned, Daiya offers great dairy-free shreds that perform well in casseroles.

When it comes to the type of chicken, you have plenty of flexibility. I’ve used everything from diced leftover roasted chicken to a can of drained, pre-cooked diced chicken. Skinless, boneless chicken breasts or thighs are ideal if starting raw. Remember, if you’re using raw chicken (or any raw meat), it must be cooked beforehand using the sauté function until it’s no longer pink before adding the broth and rice to ensure food safety and proper cooking.

Recipe by Justine

Prep Time: 15 mins | Cook Time: 10 mins | Servings: 6

Equipment

  • 1 Pressure Cooker (e.g., Instant Pot, Ninja Foodi)

Ingredients

  • 2 cups cooked chicken, diced (or ham, turkey, sausage)
  • 1.5 cups white rice, uncooked
  • 1 tbsp butter
  • 1 small onion, diced
  • 1 tbsp minced garlic
  • 4 cups chicken broth
  • 4 cups broccoli florets, chopped into small pieces
  • 1/2 cup sour cream
  • 1 pinch salt and pepper, to taste
  • 2 1/4 cups shredded cheddar cheese, divided

Instructions

  1. Set your pressure cooker to “Sauté” mode. Add the butter and diced onions. Cook until the onions are softened and translucent, which typically takes about 3 to 5 minutes. Stir in the minced garlic during the last minute of sautéing until fragrant. Cancel the sauté mode.
  2. Pour the chicken broth into the pot and add a pinch of salt. Stir to combine, ensuring any browned bits from sautéing are scraped from the bottom of the pot (this helps prevent a “BURN” notice). Carefully sprinkle the uncooked white rice evenly into the pot over the broth. Do NOT stir the rice once it’s added; it should sit on top of the liquid.
  3. Secure the lid on your electric pressure cooker and ensure the steam release valve is set to the “Sealing” position. Select “Manual” or “Pressure Cook” mode and set the cooking time to 10 minutes on high pressure.
  4. Once the cooking cycle is complete, perform a quick release of the pressure by carefully turning the steam release valve to the “Venting” position. Once all the steam has escaped and the float valve drops, open the lid.
  5. Gently fluff the cooked rice with a fork. Stir in the broccoli florets and the precooked diced chicken (or ham). If you prefer your broccoli extra tender, you can blanch it in boiling water for 1 minute before adding it to the pot. Place the lid back on the Instant Pot (without sealing or setting pressure) and let it rest on the “Keep Warm” setting for 10 to 15 minutes, or until the broccoli reaches your desired tenderness.
  6. After the broccoli has softened, stir in the sour cream and 1 ¾ cups of the shredded cheddar cheese into the rice mixture until well combined and melted. Sprinkle the remaining ¼ cup of cheddar cheese over the top. Place the lid back on for approximately 5 minutes, allowing the cheese to melt completely and any remaining moisture to be absorbed.
  7. Fluff one last time and serve your creamy, cheesy Instant Pot Chicken Broccoli Rice hot.

Frequently Asked Questions (FAQ)

Can you cook rice and meat at the same time in an Instant Pot?

Absolutely! The Instant Pot is fantastic for cooking rice and precooked meat together, especially in casserole-style dishes. The key is proper layering and liquid ratios. For this chicken broccoli rice, we first sauté the aromatics, add broth and rice (without stirring), and then pressure cook. The precooked chicken and broccoli are gently folded in after the pressure cooking cycle to maintain their texture and prevent overcooking.

How do I cook chicken in the Instant Pot for this recipe?

For this recipe, we recommend using precooked chicken (like shredded rotisserie chicken or diced leftovers). If you only have raw chicken, dice it into bite-sized pieces and sauté it directly in the Instant Pot with a little oil until it’s no longer pink before adding the other ingredients and broth. This ensures the chicken is fully cooked and flavorful. For cooking a whole chicken or larger cuts, separate instructions (like using a trivet and broth) would apply, but for this casserole, diced and sautéed raw chicken or precooked chicken is best.

Can you put frozen chicken in an Instant Pot?

Yes, you can cook frozen chicken in the Instant Pot, but it requires a slightly different approach than raw or precooked chicken. If you’re starting with frozen chicken breasts or thighs, you’ll need to pressure cook them separately first. Follow specific instructions for cooking frozen chicken in your Instant Pot until it’s cooked through. Once cooked, shred or dice the chicken, drain any excess liquid, and then incorporate it into this broccoli rice dish at the stage where the precooked chicken is added.

Can I use brown rice instead of white rice?

While white rice is specified for this recipe due to its shorter cooking time and softer texture that blends well into a creamy casserole, you can use brown rice with adjustments. Brown rice typically requires more liquid and a longer pressure cooking time (usually 20-25 minutes). You would need to increase the chicken broth slightly and adjust the cook time accordingly. Be aware that the texture and overall consistency of the dish will be different with brown rice, resulting in a chewier grain.
