  • 1 lb pork sausage, ground, regular or spicy version is great
  • 2 stalks celery, diced
  • 2 tbsp hatch chile, I used roasted – skin, seeds and membrane removed, then diced – I used the mildest version, can use as much as you’d like depending on your heat level preferences (could dice them fresh if you don’t have the means to roast them too, they will soften in the IP)
  • 1/2 onion, diced
  • 1 can cream of mushroom soup
  • 2 1/4 c broth, chicken or vegetable
  • 1 c rice, white, uncooked
  • 1/2 bell pepper, diced, optional
  • 1 green onion, diced, optional
  • 2 tbsp olive oil

Instructions

  1. Set your pressure cooker to sauté mode. Add olive oil and then your ground sausage. Break it up into smaller pieces with a spoon and cook for approximately 3 minutes, until it starts to brown.
  2. At this point, you can add your diced onion and bell pepper if you’ve chosen to include them. Continue cooking until the sausage is no longer pink. You can also add your diced hatch chiles now or incorporate them in a later step.
  3. Once the sausage is browned, press the “Cancel” button on your pressure cooker to turn off the sauté function. This crucial step prevents the “Burn” message from appearing later.
  4. In a separate bowl, whisk together your broth and cream of mushroom soup until the mixture is smooth and lump-free.

(If your pressure cooker doesn’t have a “low” pressure option, simply use the “Rice” button if available, or the standard “High” pressure setting for 10 minutes).
  9. Allow for a 2-minute natural release of pressure after the cooking cycle is complete. This means you do nothing and let the pressure come down slightly on its own.
  10. After 2 minutes, perform a quick release by carefully opening the steam valve. Once all the steam has escaped and the float valve has dropped, quickly lift the lid off, tilting it away from you to prevent any condensation from dripping back into the casserole.
