While both methods yield delicious results, we’ll primarily focus on the direct cooking method as it’s often more straightforward for this particular recipe.

Achieving that luscious, creamy texture in your tapioca pudding starts with understanding your ingredients:
- Milk: For the creamiest results and to properly cook the tapioca pearls, we recommend using whole milk or 2% milk. While we haven’t personally tested this specific recipe with dairy-free alternatives, we’ve had excellent results using coconut milk in our Instant Pot coconut rice pudding, so that could be a viable option for a dairy-free tapioca pudding too.
- Egg: A large egg is crucial for thickening the pudding and giving it a silky smooth consistency. Ideally, use an egg that’s at room temperature. It’s essential to temper the egg by whisking a small amount of the hot tapioca mixture into it before adding the tempered egg back into the main pot. This gradual temperature equalization prevents the egg from scrambling and ensures a smooth finish.
- Tapioca Pearls: This recipe primarily focuses on the “regular” small or large tapioca pearls (not necessarily “Minute” tapioca for the direct cook method). You can typically find these in the baking aisle of your grocery store. For the “Pot in Pot” method mentioned below, “Minute tapioca” (which comes in a red box) is often used, but for the direct cook method, standard small or large pearls work beautifully and don’t require pre-soaking.

- We strongly recommend using a non-stick inner pot for this and many other Instant Pot recipes to prevent sticking.
- Add your preferred brand of small pearl tapioca or large tapioca pearls and the specified amount of water directly into your Instant Pot. Stir briefly.
- Close the lid and ensure the steam release valve is sealed. Set your Instant Pot to Pressure Cook (or Manual) on High for 5 minutes. While it’s cooking, whisk together your egg yolks and milk in a small bowl, so they’re ready.
- Once the pressure cooking cycle is complete, perform a Quick Release. Immediately after releasing pressure, turn the Instant Pot OFF using the Cancel button. This crucial step prevents the “BURN” notification and stops the cooking process. Use a wooden spoon to gently scrape any bits of tapioca that might have settled at the bottom of the pot.
- Next, turn your pressure cooker to the Sauté setting.
