You can adapt the same seasoning for chicken breasts, but expect slightly longer cook times and a leaner, firmer texture. Breasts won’t be quite as rich as thighs, so watch them closely to avoid drying out.
Marinade
A homemade jerk seasoning lets you control the heat and balance of flavors. The blend used here includes: cayenne pepper (adjust to taste), brown sugar, allspice, cinnamon, nutmeg, smoked paprika, salt, pepper, plus soy sauce, lime juice, apple cider vinegar, minced garlic and a bit of vegetable oil to help the spices coat the meat evenly.
How long should you marinate chicken thighs?
For vibrant flavor, marinate the thighs for at least 4 hours in the refrigerator. If you want the deepest flavor, marinate overnight. Always keep the chicken covered and chilled while marinating.

How Long to Cook Jerk Chicken Thighs in the Oven
Bone-in thighs take longer than boneless pieces. Bake at 400°F for about 45 minutes, or until the thickest part of the thigh reaches a safe internal temperature. Skin-on versus skinless won’t dramatically change the cook time, but skin-on will help lock in juice and develop a crisp exterior.
Jerk Chicken with Frozen Chicken Thighs
You can bake frozen thighs, but you can’t marinate them while frozen. If starting from frozen, cook them partway until they begin to thaw and then brush on the marinade for the remainder of the cooking time, taking care to avoid burning the sugars in the marinade.
How do you know when they are done?
Use a meat thermometer inserted into the thickest part of the thigh, avoiding the bone. For juicy results, remove the chicken from the oven when it reaches about 160°F; it will rise a few degrees while resting. Try not to exceed 165°F, which can dry the meat.

Mistakes to Avoid
Don’t overdo the heat on your first try — start with a modest amount of cayenne and increase it the next time if desired. It’s difficult to dial down heat once it’s on the meat. Also, avoid overcooking: watch the thighs closely in the final 5–10 minutes and check every few minutes until they reach the right temperature. Let the chicken rest 5–10 minutes before slicing so the juices redistribute.
FAQ
If the pieces are skin-on, removing the skin will strip away a lot of the concentrated seasoning. For skinless pieces, scrape off excess seasoning or spread a thin layer of mayonnaise or plain yogurt to mellow the heat.
