Cooking Beans in a Pressure Cooker

Mastering Instant Pot Baked Beans with Dry Beans

Cooking beans in a pressure cooker is surprisingly straightforward and yields perfectly tender, flavorful results every time. Unlike the all-day affair of soaking and slow cooking, this high-pressure method dramatically reduces cooking time. The concentrated environment of the pressure cooker also allows flavors to infuse more deeply, potentially making these even better than traditional recipes.

There are several compelling reasons why cooking homemade baked beans in an Instant Pot stands out:

  1. Uncompromised Quality Control: When you cook from scratch, you know exactly what ingredients go into your meal. Say goodbye to preservatives and excessive sodium often found in canned goods, embracing a healthier, more wholesome option for your family.
  2. Perfect Texture Every Time: Whether you’re making baked beans or chili with dry beans in a pressure cooker, you have precise control over the final texture. Some prefer their beans firmer, while others enjoy a softer, melt-in-your-mouth consistency. The Instant Pot allows you to achieve your ideal tenderness.
  3. Tailored Sweetness Levels: Love your baked beans intensely sweet, or prefer a more subtle hint of sugar? This recipe empowers you to adjust the sweetness to your liking. Add an extra tablespoon or two of brown sugar or molasses for a stickier, sweeter sauce, or reduce it for a milder flavor profile.
  4. Incredibly Economical: Making baked beans from dry beans is remarkably budget-friendly. You can prepare a generous pot that feeds ten people for under $5, making it an excellent choice for feeding a crowd or meal prepping. Guests will be convinced you’ve mastered a secret recipe, as these beans taste like a gourmet version of **copycat Bush’s baked beans**, only far superior.

Exciting Flavor Variations

The heat level of these baked beans can be entirely customized. Start with a small amount of spice and adjust to your taste preferences at the end. For those who enjoy a bit of warmth, a few options include Sriracha or Tabasco sauce, which are classic choices. Alternatively, red pepper flakes can provide a pleasant, subtle heat that permeates the dish beautifully.

Achieving Perfection: Baked Beans in Your Pressure Cooker

While you can easily adjust the spice level, we typically keep our beans on the milder side for broad appeal. We always incorporate a touch of chili powder, as it imparts a wonderful depth of flavor to the rich, homemade baked bean sauce. For those who crave more heat, feel free to almost double the amount of chili powder, or experiment with other spicy additions like a dash of cayenne pepper. Regardless of your spice preference, the outcome is consistently tender beans enveloped in a thick, sweet, and incredibly savory sauce, made irresistible with generous chunks of bacon. They are, quite simply, “oh my goodness good!”

  • If you don’t yet own an Instant Pot or similar pressure cooker, we wholeheartedly recommend investing in one.

Many home cooks, ourselves included, initially hesitated, sticking to traditional slow cookers. However, once you grasp the ease and efficiency of a pressure cooker, you’ll be creating new, quick, and delicious meals in under 30 minutes regularly. This versatile 7-in-1 device truly simplifies dinner preparation, making it a game-changer for busy households.

Any brand of pressure cooker will perform beautifully for this recipe. Whether you own an Instant Pot, Mealthy, or Crockpot Express, the fundamental principles remain the same. The consistent results and significant time savings make it an invaluable kitchen tool.

Instant Pot Baked Beans

Gathering these essential ingredients will allow you to create a large, satisfying pot of these delectable baked beans. Remember, the heat level is entirely adjustable based on your personal preference. The recipe as written below will produce a mild flavor profile.

Key Ingredients for Flavorful Baked Beans

  1. Dry Pinto Beans or Navy Beans: These serve as the perfect base for your baked beans. Ensure they are rinsed thoroughly before cooking. Room temperature water is often preferred over cold water for softening dry beans efficiently.
  2. Water: Essential for pressure cooking the dry beans until tender.
  3. Bacon: While optional, diced bacon adds a phenomenal savory depth and crispy texture that truly elevates the dish. It’s highly recommended for that classic baked bean flavor.
  4. Onions: Diced yellow or white onions provide a sweet and aromatic foundation when sautéed with the bacon.
  5. Molasses: This ingredient is crucial for that distinct, deep, and slightly smoky flavor characteristic of traditional baked beans.
  6. Brown Sugar: Adds a rich sweetness that balances the savory elements and contributes to the thick, glossy sauce.
  7. Dry Mustard: A subtle yet powerful ingredient that provides a delightful “pop” and complexity to the flavor profile.
  8. Ketchup: Believe it or not, ketchup forms a significant part of the sauce base, offering both sweetness and a tangy tomato flavor.
  9. White Wine Vinegar: This brightens the sauce with a touch of acidity, cutting through the sweetness and richness, making the flavors sing.
  10. Salt & Garlic Salt: For seasoning and enhancing overall taste.
  11. Chili Powder: Adds a gentle warmth and earthy spice, customizable to your liking.
  12. Worcestershire Sauce: Contributes an umami depth that rounds out the flavor profile beautifully.

Some cooks enjoy adding a touch of maple syrup for extra sweetness, but we find this recipe is perfectly sweet as is. Our only typical adjustment is to the spice level, depending on who we’re serving or our mood.

Beyond the Classic: Serving Ideas and Variations

For another family-friendly dinner winner, consider adding hot dogs towards the end of the cooking process, transforming this into an Instant Pot beans and franks meal. If you desire a spicier batch, stir in Sriracha, one tablespoon at a time, after the beans are cooked to reach your preferred heat level.

Best Instant Pot Baked Beans

Below, you’ll find a clear, step-by-step guide to preparing these fantastic baked beans. Remember that the sauce will naturally thicken as the beans cool and rest. This recipe is designed for a 6-quart pressure cooker, and we generally advise against doubling the recipe in such a pot, as it can affect cooking times and potentially lead to undesirable results.

Simple Steps to Cook Baked Beans in Your Instant Pot

  1. Begin by rinsing your dry beans thoroughly under cold water. Transfer them to your pressure cooker along with 6 cups of water and 1 teaspoon of salt. This initial cooking phase is crucial for achieving tender beans.
  2. Secure the lid on your Instant Pot, close the steam valve, and set it to the “Bean/Chili” setting on normal pressure for 60 minutes. Once the cooking cycle is complete, allow for a natural pressure release. After the float valve drops, carefully open the lid. Drain the cooked beans and set them aside.
  3. While the beans are cooking, prepare your aromatics. Dice the onion and bacon. Once the beans are drained, switch your Instant Pot to the “Saute” setting (normal). Add a few tablespoons of olive oil to the pot, then toss in the diced bacon and onion. Sauté until the onions are softened and the bacon has crisped up slightly.
  4. Turn off the pressure cooker (this is an important step to prevent a “burn” notice when repressurizing). Immediately deglaze the pot by scraping any browned bits from the bottom with a wooden spoon, adding a splash of water if needed. This prevents sticking and infuses flavor into the sauce.
  5. In a separate bowl, whisk together all the remaining sauce ingredients (molasses, brown sugar, dry mustard, ketchup, salt, garlic salt, white wine vinegar, chili powder, and Worcestershire sauce) until well combined.
  6. Return your cooked and softened beans to the pot with the sautéed bacon and onions. Whisk the sauce again to ensure the sugar hasn’t settled, then pour it over the bean mixture. Stir gently to ensure all the beans are beautifully coated with the rich sauce.
  7. Place the lid back on the Instant Pot, close the steam valve, and set it to the “Bean/Chili” setting (normal) for an additional 30 minutes. This final cooking period allows the beans to meld with the sauce, deepening the flavors. For exceptionally soft beans, you may extend this time slightly, but 30 minutes typically yields a perfect consistency.
  8. Once the cycle finishes, perform another natural pressure release. Carefully lift the lid and get ready to enjoy!

Tips for a Thicker Sauce

Your homemade baked beans can be served immediately. However, if you prefer a thicker sauce, switch the Instant Pot back to the “Saute” setting (normal). Stir slowly as the sauce simmers and boils for about 4-5 minutes. Then, turn off the pot and let it rest for 15-20 minutes. The sauce will continue to thicken as it cools. For convenience, you can leave the beans in the Instant Pot with the lid ajar to keep them warm until serving.

Here’s why this Instant Pot method is so revolutionary:

  1. They consistently achieve perfect results, making you feel like a culinary pro every time.
  2. Cooking and softening dry beans in the Instant Pot is dramatically faster. Refer to our comprehensive Instant Pot cooking times for beans guide for more details.
    1. No more planning overnight; soaking beans is entirely eliminated.
    2. Dry beans transform into perfectly soft, ready-to-use beans in approximately 60 minutes.
    3. Experience this transformation first-hand, much like our recipe for Instant Pot black beans, which go from dry to perfect with ease.
  3. Eliminate the need for constant supervision at the stovetop.
    1. This method allows you to simply combine the ingredients, set the pot, and walk away, freeing you up for other tasks or relaxation.

The No-Soak Advantage: Making Baked Beans Without Overnight Soaking

Indeed! When utilizing a pressure cooker, the lengthy process of overnight soaking for beans is completely unnecessary. While stovetop or oven methods typically require a 12-hour pre-soak, the high-pressure environment of the Instant Pot rapidly tenderizes dry beans without this prerequisite. Even when using a slow cooker, some recipes, like our Crockpot baked beans, successfully skip the soaking step. Personal preference plays a role, as some individuals prefer soaking for digestive reasons, but for convenience, it’s optional in pressure cooking.

Is Soaking Necessary Before Instant Pot Cooking?

As we’ve thoroughly explained, soaking beans before cooking them in an Instant Pot is absolutely not required. The pressure cooking process efficiently handles the tenderizing of dry beans. That being said, if you *choose* to soak your beans, the cooking time in the Instant Pot can be reduced by more than half, typically to around 20 minutes, though timing remains subjective to your desired tenderness. The primary reason pressure cooking surpasses making **homemade baked beans** on the stovetop or in a slow cooker is the incredible speed, consistent results, and hands-off approach.

Equipment

  • 1 pressure cooker

Ingredients

  • 16 oz. pinto beans, dry, rinsed
  • 6 c water
  • 8 pcs bacon, diced
  • 1 onion, diced
  • 3/4 c molasses
  • 1/2 c brown sugar, packed
  • 1.5 tsp dry mustard
  • 3/4 c ketchup
  • 1/2 tsp salt
  • 1/2 tsp garlic salt
  • 1.5 tbsp white wine vinegar
  • 1/2 tsp chili powder
  • 1.5 tbsp Worcestershire Sauce

Instructions

  • Rinse your beans, put inside your Instant Pot or pressure cooker with 6 cups of water and 1 tsp. salt.
  • Put lid on, close steam valve and set Instant Pot to the bean setting, normal, for 60 minutes.
  • Do a natural release when done and lift lid carefully.
  • Drain beans and set aside.
  • Mix together all other ingredients except for bacon and onions and set aside.
  • Dice onion and bacon. Set Instant Pot to saute, normal setting.
  • Pour a few tbsp. olive oil into Instant pot and add your bacon and onion.
  • Cook until onions have softened. Turn pressure cooker off (important step so it doesn’t say burn when you put it on pressure setting again). Deglaze pot (meaning scrape bacon bits off bottom, can add a bit of water to get bits off so burn notice doesn’t appear)
  • Add your beans back into your Instant Pot or pressure cooker.
  • Whisk sauce again (sugar will settle to the bottom), and pour over bean mixture.
  • Stir gently.
  • Put lid on, close valve, and set Instant Pot to bean, normal setting for 30 minutes (if you want them REALLY soft set to a bit longer but we think this is perfect).
  • Do a natural release and lift lid carefully. Can serve immediately or if you want sauce to thicken set to saute normal again and stir slowly as it boils for 4-5 minutes, then let it sit for about 10 minutes for sauce to become thick! Leave in IP to stay warm with top ajar.
  • Enjoy!
