You don’t need to be celebrating Hanukkah to appreciate the sheer joy of a perfectly cooked latke made in an air fryer. We often prepare them, experimenting with binders like all-purpose flour or crushed matzo meal – both yield fantastic results. This guide offers a foolproof, traditional recipe for potato pancakes, adapted for modern air frying techniques. It’s just one of many easy air fryer recipes we adore and frequently share on our site. (Note: This article may contain affiliate links.)

My connection to latkes goes back decades, to my childhood best friend whose family, then and now, celebrates Jewish traditions. I spent countless holidays with them, from Passover seders to vibrant fairs, where I was introduced to a rich tapestry of flavors, including gefilte fish and delicious challah bread. Over the years, I learned a great deal about her culture and cuisine.

Today, as we navigate our 40s—she a revered Rabbi, and I a passionate food blogger—our friendship remains as strong as ever. Recently, I reached out to her, seeking her go-to easy recipe for latkes. Her immediate response? “Jen makes the best; ask her!” So I did, and Jen graciously shared her cherished family recipe. She deserves all the credit for the authentic ingredients; I simply adapted her brilliant recipe to the efficiency and health benefits of the air fryer.

What are Latkes? A Culinary Tradition

Before we dive into the cooking process, let’s explore the fascinating history and cultural significance of latkes. While often confused with general potato pancakes, latkes hold a special place in Jewish tradition, particularly during Hanukkah, the Festival of Lights. They commemorate the miracle of the oil that burned for eight days in the Temple. Traditionally, latkes are pan-fried in oil, symbolizing this enduring miracle.

While potato pancakes are a broad category found in many cuisines, latkes specifically refer to these pan-fried (or air-fried, in our case!) shredded potato fritters. The recipes vary widely from family to family, often passed down through generations. Some versions include baking powder for a lighter texture, while others feature matzo meal and milk. General potato pancakes might even use leftover air fryer mashed potatoes, but true latkes begin with fresh, shredded spuds.

Air Frying Latkes: The Modern, Healthier Twist

Using an air fryer to make latkes is a game-changer, offering a crisp texture with significantly less oil than traditional frying. While we often highlight Ninja Foodi recipes on our blog, this method works beautifully in any brand of air fryer you own. The primary difference among machines is typically basket size, which dictates how many latkes you can cook at once. The most crucial factor for achieving that perfect crispiness is ensuring they are laid in a single, non-overlapping layer.

Beyond the classic potato latke, feel free to experiment with different potato varieties. For a unique twist, try sweet potato latkes, which offer a delightful sweetness and vibrant color. You can even explore purple potato varieties to add a fun, “wow” factor, especially when serving to children. Mixing and matching different potato types can also create interesting flavor and texture profiles.

Essential Ingredients for Perfect Latkes

Crafting the perfect latkes begins with selecting high-quality ingredients and understanding their roles. Here’s a breakdown of what you’ll need:

  1. Potatoes: Russet and Yukon Gold
For the ideal texture, a blend of Russet and Yukon Gold potatoes is recommended. Russets offer a starchy quality that crisps up beautifully, while Yukon Golds provide a creamy interior. Keep the skin on for added nutrients and flavor, and shred them finely using a food processor or a box grater. Immediately after shredding, the most critical step is to remove as much moisture as possible. Lay the shredded potatoes on a stack of paper towels or a clean tea towel and press firmly to absorb excess water. This step is non-negotiable for crispy latkes!
  2. Binder: All-Purpose Flour or Matzo Meal
To help bind the shredded potatoes and further absorb any remaining moisture, you’ll need a binder. All-purpose flour is a readily available option that works wonderfully. For a more traditional Hanukkah latke, matzo meal is often preferred. Both help the mixture hold its shape and contribute to a desirable texture.
  3. Eggs
Eggs act as a crucial binding agent, ensuring your latkes stay together during cooking. We prefer using organic, free-range eggs for their superior quality and rich flavor.
  4. Onion
Finely diced onion is an optional but highly recommended addition. It infuses the latkes with a subtle savory depth that complements the potatoes perfectly. If you’re not a fan of onion, you can omit it.
  5. Seasonings: Salt, Pepper, and Garlic Powder
A simple yet effective seasoning blend includes salt, pepper, and garlic powder. These staples enhance the natural flavors of the potatoes and onion. Feel free to adjust quantities to your taste or experiment with other spices like onion powder or a pinch of paprika.
  6. Olive Oil Cooking Spray
To achieve that desirable crispy, golden-brown exterior without excessive oil, a good quality olive oil cooking spray is essential. It provides a light, even coating that promotes browning and prevents sticking in the air fryer basket.

Versatile Latke Substitutions and Variations

One of the beauties of latkes is their adaptability. Don’t hesitate to experiment with substitutions to suit your dietary needs or simply to try something new:

  • Binders: As mentioned, both all-purpose flour and matzo meal work perfectly. If you’re looking for a gluten-free option, you might try a gluten-free all-purpose flour blend, keeping in mind that the texture may vary slightly.
  • Potatoes: While fresh Russet and Yukon potatoes are ideal, if you’re in a pinch, defrosted frozen hash browns can be an alternative. Ensure they are thoroughly thawed and, crucially, squeezed dry to remove all excess moisture before mixing with other ingredients. For adventurous cooks, consider adding grated carrots, zucchini (also squeezed very dry), or even parsnips for different flavor profiles and added nutrients.
  • Flavor Boosters: Instead of or in addition to onion, consider finely chopped chives, scallions, or even a touch of grated ginger for an unexpected twist. A pinch of cayenne pepper can add a subtle kick.

Expert Tips for Unbeatable Crispy Latkes

Achieving the ultimate crispy latkes in your air fryer is all about technique. Follow these expert tips for perfect results every time:

  1. Moisture is the Enemy of Crispiness: This is the most important tip! After shredding your potatoes, spread them out on several layers of paper towels or a clean tea towel. Wrap them up and press *firmly* to extract as much liquid as possible. You’ll be surprised how much water comes out. The dryer your potato shreds, the crispier your latkes will be and the better the binder will adhere.
  2. Preheat Your Air Fryer: Just like an oven, an air fryer performs best when preheated. This ensures that when the latkes enter the basket, they immediately start cooking and crisping evenly, preventing sogginess.
  3. Don’t Overcrowd the Basket: Air fryers rely on circulating hot air. Overlapping latkes will steam instead of crisp. Cook in a single layer, in batches if necessary, allowing ample space around each latke.
  4. Shape Uniformly: Aim for latkes of similar size and thickness. This ensures even cooking and consistent crispiness. Squeeze the mixture gently but firmly in your palms to form compact patties.
  5. Oil Spray is Your Friend: A light, even coating of olive oil spray on both sides of the latkes is crucial. Spray the basket before adding the latkes, and then spray the tops of the latkes once they are in place. Re-spray after flipping for an all-around golden brown finish.
  6. Flip Halfway: While not strictly mandatory in all air fryers, flipping the latkes halfway through the cooking time promotes even browning and ensures both sides get equally crispy.

Step-by-Step Guide: How to Cook Latkes in Your Air Fryer

Follow these detailed instructions to create perfectly crispy and delicious homemade latkes:

  1. Prepare the Potatoes: Thoroughly rinse your Russet and Yukon Gold potatoes. Using a food processor fitted with a shredding disc or a sturdy box grater, shred the potatoes with their skin on. Place the shredded potatoes onto several layers of paper towels or a clean kitchen towel. Fold the towel over and press down firmly to absorb as much moisture as possible. This step is paramount for achieving crispy latkes. Once dry, transfer the shredded potatoes to a large mixing bowl.
  2. Preheat Your Air Fryer: Turn on your air fryer and preheat it to 380°F (195°C) for at least 5 minutes. Preheating ensures a consistently hot cooking surface, promoting even crisping from the start.
  3. Combine Ingredients: To the bowl with the shredded potatoes, add the diced onion, eggs, all-purpose flour (or matzo meal), salt, garlic powder, and pepper. Use your hands or a large spoon to thoroughly mix all the ingredients, ensuring the potatoes are evenly coated with the binder and seasonings.
  4. Form the Latkes: Take about 3 heaping tablespoons of the potato mixture for each latke. Gently squeeze the mixture together in the palms of your hands to form a compact, flat pancake shape, about 1/2 inch thick and 3-4 inches in diameter. This gentle squeeze helps remove any lingering moisture and ensures the latkes hold their shape.
  5. Arrange in Air Fryer: Lightly spray the inside of your air fryer basket with olive oil cooking spray to prevent sticking. Carefully place the formed latke patties into the basket in a single layer, making sure they do not overlap. Overlapping will lead to uneven cooking and less crispiness. Depending on the size of your air fryer, you will likely need to cook them in batches.
  6. Spray and Cook: Once the latkes are in the basket, lightly spray their tops with olive oil cooking spray. Close the air fryer drawer and cook at 380°F (195°C) for approximately 15 minutes total.
  7. Flip and Continue Cooking: Halfway through the cooking time (around 7-8 minutes), carefully open the air fryer basket. Using tongs or a spatula, flip each latke over. Lightly spray the newly exposed tops with olive oil spray. Close the drawer and continue air frying until the latkes are deeply golden brown and wonderfully crisp.
  8. Serve Immediately: Remove the crispy latkes from the air fryer when they have reached your desired level of browning. Serve them hot with traditional accompaniments like a dollop of sour cream and fresh applesauce, or get creative with other toppings.

Air Frying Frozen Latkes: Quick & Easy

Don’t have time for homemade? Frozen latkes are a fantastic option for a quick side dish or snack, and the air fryer cooks them beautifully, often yielding superior results compared to oven baking or pan-frying. They emerge perfectly crispy and golden, just like their homemade counterparts.

Here’s how to air fry frozen latkes:

  1. Preheat: Always preheat your air fryer for 5 minutes at 400°F (200°C). This initial heat blast is key to getting them crispy.
  2. Prepare Basket: Lightly spray the air fryer basket with non-stick cooking spray to prevent the latkes from sticking.
  3. Arrange Latkes: Place the frozen latkes in a single layer in the preheated basket, ensuring they do not overlap. Work in batches if necessary.
  4. Cook: Close the drawer and cook at 400°F (200°C) for approximately 9-12 minutes, or until they are heated through and beautifully browned and crispy on all sides. Cooking times can vary based on the latke thickness and your specific air fryer model, so keep an eye on them.
  5. Flip (Optional): For even crisping, you can flip them halfway through the cooking process, though it’s often not strictly necessary for many frozen varieties.

Storing and Reheating Leftover Latkes

While latkes are undoubtedly best enjoyed fresh and hot right out of the air fryer, you can certainly save leftovers for later. With proper storage, you can maintain their deliciousness and even bring back some of their crispiness.

  1. Cool Completely: Before storing, allow the cooked latkes to cool completely on a wire rack. This prevents condensation from building up, which can make them soggy.
  2. Layer with Paper Towels: Once cooled, place a paper towel at the bottom of an airtight container or freezer bag. Arrange a single layer of latkes, then add another paper towel, followed by more latkes. Continue layering until all latkes are stored. The paper towels absorb any residual moisture.
  3. Refrigerate: Store the container or bag flat in the refrigerator for up to 2-3 days.
  4. Reheating for Crispiness:
    • Air Fryer (Recommended): For the best results, reheat latkes in a preheated air fryer at 350°F (175°C) for 3-5 minutes, or until thoroughly heated and re-crisped. Lightly spray with olive oil before reheating for extra crunch.
    • Oven: Alternatively, you can reheat them on a baking sheet in an oven preheated to 375°F (190°C) for about 5-7 minutes.
    • Microwave (Not Recommended for Crispiness): While you *can* reheat them in the microwave, they will lose their crisp texture and become softer. Use only if crispiness isn’t a priority.

Frequently Asked Questions About Air Fryer Latkes

Why aren’t my shredded potatoes getting crispy in the air fryer?

The most common reason for soggy latkes is insufficient moisture removal from the shredded potatoes. Potatoes contain a lot of water, and if not pressed out thoroughly, this moisture will steam the latkes instead of allowing them to crisp. Always use several layers of paper towels or a clean tea towel to squeeze and press out as much liquid as possible after shredding the potatoes. This crucial step ensures the binder can adhere properly and results in the crisp, golden texture you desire.

What should you serve with latkes?

Traditional accompaniments for latkes are a dollop of cool sour cream and a side of sweet applesauce – the contrast of savory and sweet is truly delightful. For an elevated experience, you can garnish your sour cream with freshly diced chives or green onions. If you’re looking to make them part of a more substantial meal, consider serving them alongside smoked salmon or a tender roasted brisket. For a twist, try a dollop of plain Greek yogurt instead of sour cream, or a sprinkle of fresh dill.

Can I make latke batter ahead of time?

It’s generally not recommended to make latke batter too far in advance. Shredded potatoes tend to oxidize and turn brown quickly once exposed to air. While some recipes suggest soaking them in water to prevent this, for crispy latkes, it’s best to shred, squeeze dry, and mix the batter right before you plan to cook them. If you absolutely must prepare components in advance, you can dice the onion and have your eggs and flour measured out, but shred the potatoes last.

What kind of potatoes are best for latkes?

For the best results, a combination of Russet and Yukon Gold potatoes is often preferred. Russets are high in starch, which helps them crisp up beautifully, while Yukon Golds offer a slightly creamier texture and golden hue. Avoid waxy potatoes like red new potatoes, as they tend to hold too much moisture and won’t get as crispy.

Embrace the ease and deliciousness of air fryer latkes, whether for a special holiday or a comforting weeknight treat. Their undeniable crispiness and satisfying flavor are sure to make them a family favorite!
