  • To ensure the best results and minimize any sticking, I HIGHLY recommend investing in this non-stick inner pot. It makes cleanup an absolute breeze, helps prevent the dreaded “burn” notice, and ensures your precious ingredients don’t adhere to the bottom.
    • While this superior liner significantly reduces potential issues, it’s still a smart culinary practice to know how to deglaze a pressure cooker after sautéing. This simple yet effective step involves adding a splash of liquid (like broth or water) and scraping up any browned bits from the bottom of the pot. It not only prevents sticking but also ensures all those delicious caramelized flavors contribute to the richness of your sauce.

For your reference, the model I rely on for all my recipe creations and culinary adventures is a standard 6-quart Instant Pot, which consistently proves to be the perfect size for preparing satisfying family meals like this delightful Lo Mein.

Chicken Lo Mein Instant Pot: Recipe Highlights and Customizations

The sheer brilliance of this Chicken Lo Mein Instant Pot recipe lies in its remarkable simplicity and lightning-fast cooking time. With just a few minutes of active preparation, you’ll effortlessly dice up some chicken, quickly whisk together a fragrant, savory sauce, and then watch in amazement as your noodles cook to absolute tender perfection in a mere 4 minutes of pressure cooking! This dinner, generously loaded with a medley of fresh, colorful vegetables, is an absolute showstopper. You truly have to try it to fully appreciate just how incredibly good it is!

Protein Power: Fresh, Frozen, or Flavorful Alternatives

Whether you’re starting with fresh boneless, skinless chicken breasts or succulent chicken thighs, simply dice them into uniform bite-sized pieces to ensure quick and even cooking. Did you forget to defrost your chicken? No problem at all! The Instant Pot is incredibly forgiving. You can easily cook frozen chicken in your Instant Pot first, shred it once cooked, and then incorporate it back into the dish as directed below. This fantastic flexibility ensures that dinner is never derailed by a simple oversight.

Craving something a little different? This recipe is wonderfully adaptable to various proteins. If beef is more to your liking, slice it thinly against the grain to ensure it cooks quickly and remains tender under pressure. Marinating the beef beforehand, perhaps in a savory teriyaki or soy-ginger sauce, will add an extra layer of exquisite flavor and promote tenderness. Briefly sauté it until the outsides are no longer pink, then proceed with the recipe as usual. Shrimp is another excellent and quick-cooking option – simply add it in at the very end and let the residual heat cook it through for a minute or two.

For our cherished vegetarian friends, or those simply looking to reduce their animal product intake, you can confidently omit the meat entirely and significantly increase the vegetable content, or add plant-based proteins such as firm tofu (pressed and cubed), tempeh, or edamame. This truly makes it a super versatile meal capable of catering to almost any dietary preference.

Noodle Know-How: Achieving Perfect Texture Every Time

While traditional wide lo mein noodles offer that authentic, satisfying texture we all love, don’t let their absence deter you from making this incredible dish. If you can’t readily find them in your local grocery store, they are conveniently available for purchase online. As a widely tested and highly successful alternative, regular spaghetti noodles work surprisingly well! When using spaghetti, simply break them into thirds or quarters to mimic the length of traditional lo mein noodles and increase the pressure cook time to 8 minutes for optimal tenderness. The rest of the recipe remains exactly the same, making this a highly flexible and accessible option for everyone.

The most crucial tip for achieving perfectly cooked, non-clumpy noodles in your pressure cooker is the method by which you add them to the pot. A criss-cross pattern, after the noodles have been broken into smaller, manageable pieces (if they aren’t already short), is absolutely ideal. This strategic arrangement helps tremendously in preventing them from sticking and clumping together, while simultaneously ensuring they are adequately submerged in the cooking liquid for uniform and even cooking. Overlapping them as little as possible is the golden rule here. We’ve explored and perfected many delicious Asian Instant Pot dinner recipes, like our famous Instant Pot pulled pork with its incredible homemade sauce, and this Instant Pot Chicken Lo Mein certainly stands proudly among them as a consistent family favorite.

Cooking chicken in a pressure cooker is an incredibly efficient method that consistently yields remarkably tender, juicy, and flavorful results. For a dish like this, which is akin to an Instant Pot stir fry, you’ll want your meat, whether it’s chicken, beef, or another protein, to be diced into smaller, uniform pieces as precisely shown in our images. This ensures not only even cooking but also an impressively quick cooking time, making it ideal for those busy weeknights. Boneless, skinless cuts are generally recommended for this recipe for ease and speed.

Essential Ingredients for Your Flavorful Instant Pot Chicken Lo Mein

Crafting a truly authentic, aromatic, and deeply delicious Instant Pot Chicken Lo Mein starts with a thoughtful selection of fresh, high-quality ingredients. Here’s a comprehensive list of what you’ll need to bring this culinary masterpiece to life in your kitchen:

  • Chicken: You’ll need 1 lb of boneless, skinless chicken breasts or thighs. Thighs often offer a richer flavor and tend to stay juicier under pressure. Cut your chosen chicken into uniform bite-sized pieces for even cooking.
  • Sesame Oil: 1 tablespoon of sesame oil is a cornerstone of Asian cuisine, imparting a distinctive nutty, earthy, and aromatic depth that is simply essential for achieving that authentic lo mein flavor. Do not skip this key ingredient!
  • Garlic: 1 tablespoon of freshly minced garlic forms a pungent, savory base for our sauce and infuses the chicken with incredible, robust flavor from the very start.
  • Ginger: 1 teaspoon of freshly minced ginger offers a warm, zesty, and subtly spicy kick that perfectly complements the garlic and other vibrant Asian flavors in the dish.
  • Lo Mein Noodles: Approximately 8 ounces of wide lo mein noodles are ideal for that classic, satisfying takeout texture. If these are unavailable, regular spaghetti works wonderfully as a resourceful substitute (refer to our tips section below for guidance on usage).
  • Fresh Vegetables: A vibrant and colorful mix is key! This includes 1 julienned (thinly sliced) carrot, ½ cup of thinly sliced red cabbage for crunch and color, 1 cup of crisp snow peas (add these toward the end for best texture), and 5 diced green onions (reserving some for a fresh garnish). Feel free to customize this selection with other quick-cooking veggies like thinly sliced bell peppers, broccoli florets, or even mushrooms, depending on your preference.
  • Soy Sauce: ¼ cup of soy sauce is the undeniable backbone of our savory sauce, providing that essential umami depth and a foundational salty flavor. We recommend using a low-sodium variety to better control the overall saltiness of the dish.
  • Water: ¾ cup of water helps to create the perfect consistency for our sauce, allowing it to properly hydrate the noodles and evenly distribute flavors.
  • Cornstarch: 2 tablespoons of cornstarch are a crucial ingredient for thickening the sauce, giving it that characteristic glossy, luxurious texture that clings beautifully to the noodles and chicken. If you need a gluten-free alternative, arrowroot powder works wonderfully as a direct substitute.
  • Chicken Stock: 2 cups of chicken stock (or vegetable broth for a vegetarian option) form the main liquid base of our flavorful sauce, ensuring proper noodle hydration and a rich, cohesive taste profile.
  • Optional Flavor Enhancers: Consider adding ½ teaspoon of red pepper flakes for a subtle or pronounced kick of heat, or 1 tablespoon of brown sugar for a delightful hint of sweetness that balances the savory notes.

This careful and thoughtful selection of ingredients ensures that your homemade Instant Pot Lo Mein will not only be incredibly flavorful but also come together quickly, making for a total meal preparation time of under 30 minutes, and an absolute delight to eat once it’s done cooking.

Pro Tips for Crafting the Best Instant Pot Chicken Lo Mein

Achieving restaurant-quality lo mein right at home in your pressure cooker is far simpler than you might imagine, especially when armed with these invaluable insider tips and tricks:

Noodle Perfection: The Golden Rule for Texture

The most critical aspect for perfectly cooked, non-sticky, and uniformly tender noodles is the precise ratio of pasta to liquid, and crucially, ensuring adequate submergence of the noodles. You absolutely need enough liquid for the noodles to fully absorb and become tender without drying out or clumping. If they are not sufficiently moist and submerged, they will likely remain stiff, brittle, and undercooked. Therefore, breaking longer noodles apart into smaller, more manageable pieces (typically into thirds) and arranging them in a loose, criss-cross pattern is usually necessary to get the job done right. This simple yet effective technique minimizes clumping and maximizes the surface area contact with the cooking liquid, leading to beautifully uniform and tender noodles every time.

What Can You Use Instead of Traditional Lo Mein Noodles?

If traditional wide lo mein noodles are completely unavailable in your local store, do not fret! Many enthusiastic home cooks have discovered excellent success just by using regular spaghetti noodles as a clever substitute. Due to their slightly different texture and density compared to authentic lo mein noodles, I highly recommend adding an extra 4 minutes to the pressure cooking time when using spaghetti, bringing the total pressure cook time to a precise 8 minutes for optimal tenderness. Remember to break the spaghetti into thirds before carefully adding it to the pot; this crucial step will allow the noodles to absorb the flavorful liquid more effectively and cook to that coveted perfect tenderness, preventing any sticking and frustrating clumping.

How Do You Thicken Lo Mein Sauce to Perfection?

Cornstarch is our trusty secret weapon for achieving that signature glossy, beautifully thick lo mein sauce. It plays a vital role in helping the sauce cling wonderfully and evenly to every strand of noodle and every piece of chicken, thereby intensifying the savory flavor in every single bite. If you have dietary restrictions and require this dish to be gluten-free, or simply prefer an alternative, arrowroot powder works wonderfully as a direct substitute for cornstarch, offering very similar thickening properties and a smooth finish. While this final thickening step isn’t strictly necessary for the dish to be delicious and enjoyable, it definitely enhances the overall mouthfeel, texture, and richness of the sauce, making it far more akin to your favorite high-quality takeout lo mein experience.

Vegetable Versatility and Strategic Timing

The inherent beauty of lo mein lies in its incredible adaptability with various vegetables. Firmer vegetables, such as julienned carrots, thinly sliced red cabbage, and even bell peppers, can be confidently added at the same time as the chicken and noodles, as they benefit from the full pressure cooking time to become tender yet retain a slight bite. However, more delicate and quick-cooking vegetables, such as vibrant snow peas or tender broccoli florets, are absolutely best stirred in *after* the pressure cooking is complete and the pressure has been safely released. The potent residual heat within the pot will gently and perfectly cook them to a crisp-tender perfection, preserving their bright color, vital nutrients, and delightful crunch. Avoid adding these delicate veggies during the initial pressure cook phase, as they can quickly become overly soft and lose their appealing texture.

Flavor Boosters and Personal Adjustments

Always feel empowered to adjust the sauce and seasonings to perfectly match your family’s unique preferences. For those who enjoy a spicier kick, a generous dash of sriracha, a pinch of red pepper flakes, or a touch of chili garlic sauce can be stirred in at the end. If you prefer a slightly sweeter flavor profile, a touch of brown sugar or a drizzle of honey can expertly balance the savory notes of the soy sauce and chicken stock. It is always a good idea to taste and adjust seasonings before the final pressure cook, or even at the very end. A final drizzle of toasted sesame oil just before serving also dramatically enhances the overall aroma and complex flavor profile of the dish, adding an extra layer of deliciousness.

Step-by-Step Guide: Making Instant Pot Chicken Lo Mein

Let’s walk through the simple, clear steps to create this incredible one-pot meal. Remember, the key to success is carefully following the instructions, especially when it comes to layering your ingredients and resisting the urge to stir the noodles before the pressure cooking phase.

  1. Sauté the Chicken: Begin by adding 1 tablespoon of sesame oil to the inner pot of your Instant Pot. Select the “Sauté” function on normal mode. Once the oil is shimmering hot, add your diced chicken, minced garlic, and a pinch of salt and pepper. Cook, stirring occasionally, until the chicken is mostly white on the outside (this usually takes about 3-4 minutes). This crucial step locks in flavor. Turn the Instant Pot off when done with sautéing to prevent sticking before pressure cooking.
  2. Layer the Vegetables: Next, evenly add your firmer vegetables, such as the julienned carrots and thinly sliced red cabbage, spreading them over the sautéed chicken at the bottom of the pot.
  3. Add the Noodles: Carefully break your lo mein noodles (or spaghetti if substituting) into thirds or quarters if they are long. Arrange them in a loose, criss-cross pattern on top of the vegetables. It’s crucial not to fully submerge them in the liquid at this stage, and absolutely do NOT stir the ingredients together yet.
  4. Prepare the Sauce: In a separate medium-sized bowl, whisk together the cornstarch, soy sauce, water, and chicken stock until the mixture is thoroughly combined and smooth, with no lumps of cornstarch remaining. This creates your rich and flavorful lo mein sauce.
  5. Pour in the Sauce: Gently and evenly pour the prepared sauce over the noodles and vegetables in the inner pot. Using a spoon or spatula, lightly push the noodles down into the liquid to ensure they are as submerged as possible. Again, resist the urge to stir all the ingredients together; proper layering is absolutely crucial for preventing the dreaded “burn” notice and ensuring that all components cook evenly.
  6. Pressure Cook: Secure the lid onto your pressure cooker and ensure the pressure release valve is turned to the “Sealing” position. Set your Instant Pot to “Manual” or “Pressure Cook” (High Pressure) for 4 minutes. (If you are using regular spaghetti noodles as a substitute, you will need to increase the cook time to 8 minutes).
  7. Quick Release: Once the cooking cycle is complete, carefully perform a quick pressure release (QR) by turning the pressure release valve to the “Venting” position. Always stand clear of the escaping hot steam.
  8. Stir and Serve: Once the float valve drops indicating all pressure has been released, carefully remove the lid. Add the snow peas and the majority of the diced green onions. Stir all the ingredients together vigorously until the sauce thickens and beautifully coats everything in the pot. The residual heat will gently cook the delicate snow peas and green onions to a crisp-tender perfection. Serve immediately, perhaps with an extra sprinkle of fresh green onions or sesame seeds for garnish, and enjoy!

Everything will be cooked perfectly in this impressively short amount of time, resulting in a delightfully cohesive and flavorful meal that tastes like it took hours. For an added touch of freshness and balance, serve your Instant Pot Lo Mein with a side of steamed broccoli florets. Remember not to add these delicate florets directly into the pot during the initial pressure cooking phase, as the noodles require a longer cooking time than these tender veggies. The comprehensive instructions provided above apply universally to any brand of electric pressure cooker, making this recipe accessible to everyone. Low-Carb Option: How to Make Spaghetti Squash Lo Mein

Looking for a delicious, low-carb twist on this beloved classic dish? You can effortlessly transform this recipe into a satisfying Spaghetti Squash Lo Mein by simply eliminating the traditional wheat-based noodles entirely. Prepare the chicken, all the vibrant vegetables, and the flavorful sauce mixture exactly as outlined in the main recipe instructions, cooking for the stated 4 minutes of pressure time. While your savory mixture is cooking, prepare your Instant Pot spaghetti squash separately, which is incredibly quick and easy. Once both components are ready, simply scrape the tender, spaghetti-like strands from the cooked squash and toss them together with your aromatic chicken and vegetable mixture. It’s a fantastic, nutrient-rich way to enjoy all the rich, savory flavors of lo mein with significantly fewer carbohydrates!

Storage and Reheating Tips for Delicious Leftovers

One of the many fantastic benefits of making a generous batch of Instant Pot Lo Mein is the absolute delight of having delicious leftovers! Yes, this dish saves beautifully for the next day, making for an incredibly easy second meal, a convenient lunch, or even a quick snack.

Is Lo Mein Good the Next Day?

Absolutely, it is! If your lo mein includes pasta, you’ll definitely want to ensure it’s generously coated with plenty of sauce before storing to prevent the noodles from sticking together and drying out. Allow any leftover portions to cool completely to room temperature before transferring them for storage. Then, carefully transfer the cooled lo mein to an airtight freezer bag or a sturdy container with a tight-fitting lid. It will keep wonderfully fresh in the refrigerator for up to 4 days. While it remains perfectly safe and good to eat, do note that the texture of the noodles can become a bit softer and absorb more sauce the longer it sits. For the absolute best texture and flavor experience upon reheating, enjoying it within 24-48 hours after initial cooking is usually when it’s at its prime.

The Best Way to Reheat Lo Mein

To truly bring your leftover lo mein back to life, the key is to reintroduce a little bit of moisture. Begin by adding a small splash of chicken broth, any reserved leftover sauce from the initial cooking, or even just a bit of soy sauce or teriyaki sauce over the top of the noodles. Gently toss everything together with a fork or tongs to help separate the noodles and rehydrate them. For reheating, the microwave is usually the quickest method: microwave in 45-second intervals, stirring thoroughly after each, until the lo mein is warmed through to your liking. Alternatively, you can reheat it in a skillet over medium heat on the stovetop, adding a tablespoon or two of water or broth to loosen it up and prevent sticking. Enjoy it as is, or serve it alongside a fresh bed of fluffy white rice or a simple side salad for a complete and satisfying meal. I personally detest wasting food, so I absolutely love making a second, almost “free meal” whenever I can with delicious leftovers!
