A comforting bowl of Instant Pot Ground Beef Stroganoff, garnished with fresh green onions. This hearty casserole features tender ground beef, creamy sauce, and wide egg noodles, perfect for a quick family dinner.

This effortless one-pot meal is so popular in our household that my kids regularly request it! It’s quickly earned a top spot on our list of favorite Instant Pot recipes, offering a significantly easier and faster alternative to beef stroganoff made with traditional stew meat. The magic of the pressure cooker means everything, including the uncooked egg noodles, cooks together, delivering a complete meal from start to finish in approximately 20 minutes. It’s truly amazing how quickly you can achieve such deep, comforting flavors!

You don’t need a specific “Instant Pot” brand appliance to make this recipe a success. Most electric pressure cookers, including popular models like the Ninja Foodi, work identically for this dish, provided they offer a high-pressure cooking function. This versatility ensures that virtually anyone with a multi-cooker can enjoy this streamlined stroganoff.

Ninja Foodi Ground Beef Stroganoff: Seamless Preparation

For those using a Ninja Foodi, the process for this ground beef stroganoff casserole is just as straightforward. You’ll begin by using the sauté function to brown your ground beef and onions. Once browned, you’ll incorporate the remaining ingredients, then switch to the pressure cooking lid (the one not permanently attached) to cook everything together. The subsequent steps for serving and finishing are exactly the same as detailed below for other pressure cookers, ensuring a delicious outcome every time.

If you’re looking for a dairy-free version of this comforting dish, it’s easily adaptable. You can prepare a homemade cream of mushroom soup from scratch using dairy-free milk and broth, ensuring full control over ingredients. Alternatively, many grocery stores now offer lactose-free cream of mushroom soup and sour cream alternatives that work wonderfully. Simply make these substitutions, and you can enjoy all the classic stroganoff flavors without any dairy.

Essential Ingredients for Your Pressure Cooker Stroganoff

While traditional stroganoff often calls for beef stew meat or thinly sliced beef, our recipe opts for ground beef. This choice offers several advantages: it’s typically more budget-friendly, cooks much faster, and provides a texture that is exceptionally kid-friendly. We’ve enjoyed countless versions with stew meat, but for a speedy and economical family dinner, ground beef is simply unbeatable. It blends beautifully into the creamy sauce, making every bite satisfying.

To achieve that signature creamy consistency, you’ll need a can of Campbell’s Cream of Mushroom Soup. This condensed soup acts as a fantastic shortcut, providing a rich, savory base that thickens the sauce perfectly. For those who prefer to avoid canned goods, making a homemade cream of mushroom soup is a great option and allows for ingredient customization.

The pasta of choice for this classic dish is undoubtedly a bag of egg noodles. We highly recommend using extra-wide egg noodles for their comforting chewiness and ability to absorb the rich sauce. The best part? These noodles cook directly in the pressure cooker alongside your meat and sauce, eliminating the need for a separate pot or pre-boiling. This truly makes it a one-pot wonder!

For the essential tangy creaminess, sour cream is key. If you’re looking for a healthier swap, plain Greek yogurt can be used in equal amounts, adding a similar tang and thickness. Be sure to select a plain, unflavored variety. As mentioned, dairy-free sour cream options are available in most stores for those with lactose sensitivities. A small amount of cottage cheese can also be stirred in for an extra creamy texture, though it’s optional.

To elevate the dish with a delightful crunch, we love adding crispy fried onion strings on top. You can either buy a can of French’s fried onions for convenience or prepare them fresh. For an irresistible golden-brown finish, pop the casserole under your oven’s broiler for a few minutes or use your Ninja Foodi’s air crisp function at 400 degrees Fahrenheit until perfectly crisp.

For an even richer flavor and chunkier texture, consider incorporating halved or small whole mushrooms into the mix. Fresh mushrooms offer the best flavor, but canned or boiled mushrooms can also be used if that’s what you have on hand.

Finally, the liquid essential for cooking the noodles to a perfect al dente while creating a flavorful sauce is beef broth. It forms the base of our delicious stroganoff gravy.

While this recipe champions ground beef for its speed and family appeal, we understand some might prefer the traditional beef cut. If that’s you, we also have an Instant Pot beef stroganoff recipe that uses stew meat. The ingredients are quite similar, but in that version, the noodles are cooked separately because the beef requires a longer pressure cooking time to become truly tender.

The beauty of this recipe extends beyond its quick cooking time; it’s also a dream for cleanup. Since everything cooks in a single pot, washing up is a breeze. Any leftovers can be easily stored in the same pot (once cooled) if it has a lid, though in our house, leftovers are a rare occurrence!

How to Make Ground Beef Stroganoff in Your Instant Pot

Preparing this hearty ground beef stroganoff in your Instant Pot is incredibly simple, designed for maximum flavor with minimal effort. Here’s a detailed breakdown:

  1. Sauté the Aromatics: Begin by setting your pressure cooker to the “Sauté” function. Add your ground beef and diced onions. Cook, stirring occasionally, until the ground beef is no longer pink and the onions are softened and translucent. This step is crucial for building a strong flavor base.
  2. Drain and Deglaze: Once the meat is cooked, carefully drain any excess grease from the pot. Return the pot to the pressure cooker base. Briefly deglaze the bottom of the pot with a splash of beef broth, scraping up any browned bits; this prevents a “Burn” warning and adds flavor.
  3. Layer the Ingredients (No Stirring!): Sprinkle in your quartered mushrooms evenly over the beef. Next, gently pour your bag of uncooked egg noodles on top of the mushrooms. In a separate bowl, whisk together the condensed cream of mushroom soup, Worcestershire sauce, and the remaining beef broth until thoroughly combined and smooth. Pour this mixture carefully over the noodles and mushrooms. **Crucially, do not stir the mixture at this point!** Layering helps prevent a “Burn” notice and ensures even cooking of the noodles.
  4. Pressure Cook to Perfection: Secure the lid on your pressure cooker and ensure the steam release valve is set to the “Sealing” position. Set the pressure cooker to “High Pressure” for just 2 minutes. For noodles that are slightly softer, you can increase the cooking time to 3 minutes.
  5. Quick Release and Finish: Once the pressure cooking cycle is complete, perform a quick release (QR) of the pressure by carefully moving the steam release valve to the “Venting” position. Once all the steam has escaped and the float valve drops, open the lid.
  6. Add Creaminess: Stir in 1/2 to 3/4 cup of sour cream until it’s fully incorporated and the sauce is wonderfully creamy. If you prefer a lighter touch, you can serve individual portions with a dollop of sour cream on top, or omit it entirely if you prefer a less creamy sauce.
  7. Optional Crispy Topping: For an extra layer of texture and flavor, if you’re adding fried onions, transfer the stroganoff mixture from the pressure cooker pot into a 9×9 inch oven-safe dish. Sprinkle a generous layer of fried onions over the top. You can also add some freshly diced green onions for a burst of color and freshness.
    • Using an Oven: Place the dish under your oven’s broiler for 3-4 minutes, or until the fried onions turn a light golden brown and become crispy. Watch carefully to prevent burning.
    • Using a Ninja Foodi: Close the air crisp lid on your Ninja Foodi and cook at 400 degrees Fahrenheit for approximately 4-6 minutes, or until the onions reach your desired level of crispiness and golden color.
  8. Serve immediately, with or without an additional dollop of sour cream, and enjoy this incredibly quick and flavorful Instant Pot Ground Beef Stroganoff Casserole!

Pro Tips for the Best Instant Pot Stroganoff

  • Do Not Stir! This is the most critical instruction for pressure cooking pasta. Layering ingredients with the liquid on top prevents the “Burn” message and ensures noodles cook properly without sticking to the bottom.
  • Noodle Texture: Our 2-minute pressure cook time results in al dente noodles. If you prefer them softer, increase the time to 3 minutes.
  • Dairy-Free Adaptations: As mentioned, use homemade or store-bought dairy-free cream of mushroom soup and sour cream substitutes for an equally delicious lactose-free version.
  • Flavor Boost: Don’t skip the Worcestershire sauce; it adds a crucial layer of umami and depth to the stroganoff flavor.
  • Serving Suggestions: This casserole is a complete meal on its own, but it pairs wonderfully with a simple green salad, crusty bread, or steamed green beans for added freshness.

Storage and Reheating Leftovers

This Instant Pot Ground Beef Stroganoff casserole makes fantastic leftovers! Once cooled completely, transfer any remaining stroganoff to an airtight container. It will keep well in the refrigerator for up to 3-4 days. To reheat, you can use the microwave, stirring occasionally until heated through. For stovetop reheating, add a splash of milk or broth to loosen the sauce as it may thicken in the fridge, then heat over medium-low heat until warm.
