It is best practice to put food into a hot basket. This is how to preheat air fryer first before adding your food so it becomes as crispy as possible. For best results, here's a printable free air fryer cooking time chart here for your fridge.

The interior of the air fryer basket is empty and features a mesh design, solid for cooking your favorite dishes like bang bang shrimp. The edge of the air fryer has a latch mechanism for securing the basket.

We have made all sorts of things in this “magic machine”. Speaking of this red meat we started with air fryer fajitas, and steak bites are probably one of our favorites too.

Once we perfected these air fryer beef recipes it was time to try something a bit more creative, that is when this dish came about. We always go for super EASY methods to share with all of you so we thought thinner strips of protein would do the trick.

That was a great choice, then we needed to find the other main ingredient. Typically mushroom pate is used but we couldn't find that in our small town so Brunschweiger was the alternative. That's made with pork and with the amount of seasonings in it we barely needed to season the meat.

Beef Wellington Hot Pocket

Instead of the usual frozen puff pastry, defrosted Rhodes yeast dinner rolls were used. This gave us a stronger, thicker, more resilient outer crust that took about the same time to “bake” than the meat did inside. You let them sit out for about 1-2 hours, then roll 4 of them out into a sheet like this one.

Why is beef Wellington so hard?

You don't want the typically flaky crust to get soggy or too brown while ensuring the meat inside is cooked enough. It is a difficult balance to achieve this, that is why we altered the outer pastry and sliced the meat.

Then you can fill the middle with all sorts of things right? We mean pizza toppings and the kids fave. BUT our air fryer chicken cordon bleu is by far our husband and our go to hot pocket.

You could slice steak or buy them already cut like you see here. Slice or smear some of your chosen pate on top of that and you're ready.

If you love dijon mustard you could squeeze a bit of that on the top too. Then seal the ends and middle up so nothing leaks out.

Easy Way to Make Beef Wellington

One tip to remember when rolling these up and sealing the dough on the ends and on top. Do NOT fold the sides up and over. If you do the dough will be too thick and won't cook through so it will stay a bit sticky.

How do you make Beef Wellington with Rhodes rolls?

You will need to thaw these until softened so they can be rolled out first. Once flat and filled you can press the ends down to seal and stay flat. You can see what we mean by that in the photo below here. This is what you will need:

  1. Defrosted frozen dough, we used 4 Rhodes yeast dinner rolls per hot pocket We made for this size.
  2. Strips of beef, mine was labeled fajita meat and already sliced thin
    1. you could use precooked ground beef too if you wanted
  3. Pate, we couldn't find mushroom which is what we wanted so we used Brunschwieger which is pork pate essentially.
  4. A bit of melted butter at the end to brush on the outsides is a great ending before serving.

We think using a beaten egg wash on the outside works great too. It gives them a shine and keeps the outside moist but still crispy golden brown.

Another thing we noticed once these were done. We had a bit right out of the basket, it was good. Then we set them aside and our husband enjoyed it about 30 minutes later, it was even better!

How Long to Cook Beef Wellington in Air Fryer

We wouldn't say wait this long but what we mean is that cooled a bit the flavors are more intense.

  • Slice beef into thin strips, season with salt and pepper all over. Defrost 4 frozen rolls per hot pocket.
  • Smush defrosted rolls together and roll out into a sort of individual pizza crust size. Place about small handful thin slices of beef in center with 1.5 tbsp (or so) of pate / mushroom mixture on top of that.
  • Preheat air fryer to 350 F for 5 minutes. Then fold top and bottom of dough over and seal. Do not fold over ends as it will make dough too thick and not cook through.
  • Spray inside of basket with non stick spray and lay 1-2 of these hot pockets inside with seams facing up. Brush whisked egg on top.

Air fry for total of 8 minutes, flip over and brush egg wash on top again after 4 minutes. Brush melted butter on top 1 minute before serving Allow to sit on plate for a a good 5 minutes before slicing in half and enjoying.

Occasionally you can find this version in the frozen section. We talk here about Hot Pocket in toaster oven right out of the box if it isn't homemade.

What do you serve with beef Wellington?

We mean these pockets kinda' work as is but if you wanted a vegetable duo we would suggest air fryer brussel sprouts. We'd make these beforehand because they take a bit longer. Let them sit when done to continue softening up, tender is best.

My husband likes dijon as a sort of dip but our mustard pretzel dip is fabulous too. You can offer this up cold or warm over medium high heat. Au jus is kinda' a yummy idea to serve with it too! For another air fryer beef recipegive our air fryer chuck roast a whirl.

Equipment

Ingredients

  • 8 frozen rolls, defrosted 1.5 hours, rolled flat
  • 1/2 lb beef, cut into thin slices
  • 3 tbsp pate
  • 1 pinch salt and pepper, to taste
  • 1 egg, whisked for egg wash
  • 1 tbsp butter melted, to brush on top at end, optional

Instructions

  • Slice beef into thin strips, season with salt and pepper all over.
  • Defrost 4 frozen rolls (Rhodes yeast dinner rolls were used) per hot pocket, or can make smaller ones with 2 per but will need to dice meat instead of strips for 2.
  • Smush defrosted rolls together and roll out into a sort of individual pizza crust size.
  • Place about 10 thin slices of beef in center with 1.5 tbsp (or so) of pate on top of that.
  • Preheat air fryer to 350 F for 5 minutes. Then fold top and bottom of dough over and seal.
  • Do not fold over ends as it will make dough too thick and not cook through, instead press ends together flat so they seal.
  • Spray inside of basket with non stick spray and lay 1-2 of these hot pockets inside with seams facing up. Brush egg wash on top.
  • Cook for total of 8 minutes, flip over and brush egg wash on top again after 4 minutes. Set on paper towels when done to absorb any juices from meat that may leak out so outside doesn't get soggy.
  • Brush melted butter on top at the end. Allow to sit on plate for 5 minutes before slicing in half and enjoying.
