A slice of Bisquick Pot Pie with vegetables and a golden crust rests on a spatula, ready to delight your taste buds.

Bisquick pot pie is so easy to make with one crust poured right over the top, it's warm comfort food you'll love. If your grandmother slaved over a homemade version but you don't have time for that, this easy Bisquick recipe will give you that same feel good feeling.

We have made one other version with refrigerated pie crusts. That simple chicken pot pie has similar ingredients and doesn't take long either but this takes easy a step further. By skipping the bottom crust entirely and pouring the batter right over the top of your insides it's a great baking hack.

We mean, the possibilities for this baking mix are wide. You don't have to stick with sweet pancakes or biscuits listed on the back of this yellow box. We have even made a Bisquick sausage balls recipe savory dish out of it that was a favorite of mine growing up (but took a lot longer then).

Bisquick Chicken Pot Pie Recipe

We started with this Chicken Cobbler Recipe and that was delish, the first of many that weren't breads. We will share throughout this post a few of the other things we've made with this box of goodness too 'cause this one is going to make you want to think outside of the “box” a lot more our friends.

Ok so typically we make this savory version of our pot pie crust with rotisserie chicken or leftovers from the day before. We hate wasting food as you can tell. We do like using cream of condensed soup as it makes the inside “gravy” creamy and thick. You could use Campbell's chicken variety too.

What is the sauce made of in chicken pot pie?

The sauce in chicken pot pie is usually a creamy gravy made from a base of butter, flour, and broth, thickened into a roux and then enriched with milk or cream (or condensed soup). It's seasoned with salt, pepper, and sometimes herbs like thyme or parsley, and mixed with the cooked chicken and vegetables before baking.

Bisquick Chicken Pot Pie with Veg-All

Ingredient notes

You are going to need about 2 cups of precooked diced chicken or leftover chicken breasts. Makes a great leftover turkey recipe too.

We like using a bag of mixed frozen vegetables frozen and thawed or a can of veg all drained but we feel those get a bit too soft for us.

You are going to want to add a can or about 10 oz. of homemade cream of chicken soup or mushroom variety works fine too.

To make the top crust you will want to start off with a cup of bisquickwe do not recommend the low fat version. With that you will add an egg is best at room temperature with Milk (2% or whole, dairy free variety works too).

Seasonings we use are Garlic powder and onion powder for flavor and use a baking dish is a pie plate, or feel free to use a 8×8 or 9×9 square glass dish

How do we thicken chicken pot pie?

If you're making a homemade sauce filling you can use a bit of cornstarch. note a little goes a long way so be light handed with it. Alternatively you can use arrowroot flour for gluten free options, and whole milk is better than fat free for this issue as well.

As you know we are all about easy so of course we use a can of condensed soup. We mean if you can't tell a huge difference between homemade and throw it in then is it a choice? We suppose if you needed a dairy free pot pie recipe you should go the other route but otherwise it's our choice.

Bisquick Chicken Pot Pie with Cream of Mushroom

Swaps

We mean you don't have to add greens to the inside of this but to us it kinda' wouldn't be the same thing, but whatever….. The biggest difference would be that there would be a lot more sauce unless you doubled the meat so that could kinda' soak that up in the baking process. Use what you like friends!

We suppose you could use fresh produce. You'd need to stick to those things that cook at the same pace like sliced off corn kernels, cut into thirds green beans, and small diced carrots. Ok maybe some bits of celery too.

Like we said, there is no bottom crust. We like it this way better because honestly we think the insides are what we want anyway. The batter is poured on top like we did to make our pour over top pie crust except this one here is more savory.

Chicken Pot Pie Bisquick

This is kinda' fun to make because it's different, for sure. You may question it at first since it isn't “traditional” but you'll be a believer after the first go around. Then you can go on to use other types of meat going forward, a great leftover recipe.

How Long to Cook Bisquick Chicken Pot Pie

NO need for an egg wash or to cut slits on the top because it's wet as is. Since protein is precooked you don't have to worry about it being underdone or cooking over medium high heat first. All you need to do once prepped is bake in oven for 25 minutes and enjoy when done.

How do you know when it is done?

You need to use a knife in the middle to ensure the batter is cooked thru to the middle after the cook time is up. We have never had to bake longer than 25 minutes but depending on your oven variations it may vary a few minutes here and there. It should be golden brown on top and cracking when done too.

Kitchen questions

Can you use Heart Healthy Bisquick to make pot pie crust?

You can but we don't recommend it. Reason we don't think it is the best choice is that yes it is healthier because it has less fat in the mix, but that means it turns out more dry. If you prefer this dry mix follow the directions to make the batter on the back of the box as directed, then spread on the top.

Can you add a bottom crust?

You could first make our Bisquick pie crust and par-bake it to make slightly browned. Then pour in the filling, top with bisquick dough as directed below and you would have a top and bottom crust. We think one, on the top, turns out better.

How do you save leftovers?

Make sure you wait until it is at room temperature before storing it in a sealed container first. If you are using previously cooked meat you should try to finish it up on the first go around. We don't like reheating and then reheating again protein but we have done it. Keep in the fridge for up to 3 days.

How should you reheat leftovers?

When you reheat it transfer on to a microwave safe plate and warm for about 90 seconds. Or heat like our frozen pot pie in air fryerthat would work better in that so the top gets toasty and doesn't get as soggy.
