A bowl of Instant Pot beef stroganoff with stew meat, carrots, and mushrooms served over noodles sits next to the pressure cooker.

This is total comfort food, creamy, packed with vegetables (if you want), and the tenderest beef ever when you use your pressure cooker. one of the easy Instant Pot recipes that makes us think of our Grandmother every time we take a bite.

We will tell you we have made beef stroganoff casserole for years but when we got our Instant Pot last Christmas we HAD to figure out a way to make the same dishes in that new pot. Here it is after lots of testing!

If you're looking for an easy Ninja Foodi recipe that pot works as well in that pot using the lid that isn't attached, or can be made in a Crockpot Express. You will use the same directions, temp. and timing so nothing changes in that case.

The reason why we are obsessed with this method is because beef cooked under high pressure makes your proteins super tender soaking up all the flavors in that thick gravy.

Now the cooking time is so much faster in this new all in one appliance! That is a huge help when all 5 of us are all going different directions and need something fast, but healthy, when we all get home. This 30 minute recipe is listed on our roundup of Instant Pot beef recipesyou should try a few of those after this one.

Ingredient notes

To start this off you need the star of the show, the meat. The easiest and most common choice for this would be stew meat. It is cheap, already cut up into bite size pieces and has some marbling so it will get nice and tender under high pressure.

What can you use other than stew meat?

Typically, it's made with more tender cuts which decreases the cooking time. You may want to try beef tenderloin, cubed sirloin steak, or cut up steak that needs to be cooked. Leftover cooked beef can also be used with a shorter cook time.

Onions sliced or diced in there are a great start to the vegetables you can add in there, you could also dice carrotsand halved mushrooms for more of a classic flavor.

You would want egg noodles for this traditional meal for serving. These would be boiled separately. If you wanted everything together there is an option for that below.

Cream of mushroom soup is the traditional base to make the sauce (gravy) thick easier. Or you could make homemade cream of mushroom soup first and use that for a more homemade taste. A great option if you need it to be dairy free.

As for the liquid necessary to get the pot to come to pressure and cook the meat to fork tender you want Beef brothwater or half broth, half red wine. We prefer those that lend more flavor to the dish, water won't add anything.

How to Thicken the Sauce

We do add a bit of cornstarch with a bit of liquid as a roux sort of slurry when done to thicken. But we also use sour cream to make it creamier and thicker too. Greek yogurt could be used alternative, or dairy free sour cream is great if need be. Both will make it plenty thicker. Remember that as it cools it will get thick as well so have a light hand as far as adding these last 2.

How Long to Cook Beef Stroganoff in Instant Pot

With meat that is cut up into large bite size pieces like you see here you only need 15 minutes to become fork tender. This is the size we are suggesting. If you don't buy already this size you can certainly chunk up a roast or steaks and do the same thing.

Beef Stroganoff with Frozen Beef

Yes, we have even made this with Instant Pot frozen stew meat when that was all we had on hand. Of course thawed is much better but there is a way to use frozen if that is all you have on hand. Have a few thick steaks that need to be used up? Cube those and use that, we like to use whatever we have on hand at the time.

Why we cook the egg noodles separately; The beef needs a good 15 minutes to cook and become as tender and that is far too long for any style noodle to be cooked in a pressure cooker so to achieve the solid texture you want to boil to al dente in a separate pot.

If you wanted to cook the noodles with the meat and sauce you need to swap out the larger beef pieces with ground beef instead. You can then follow our Instant Pot ground beef stroganoff directions. It works with this swap because the meat is precooked and doesn't need additional time to tenderize.

This is what it comes out looking like! It's almost better the next day, so needless to say if you have leftovers (we rarely do) you'll have a great lunch waiting for you. Want to try something else with the same meat?
