An easy mini quiche recipe featuring a delightful spinach and bacon filling, elegantly presented on a wooden surface beside a small spoon.

We LOVE this mini quiche recipe! Better yet, we love (ok it's us) muffin tin dinners. We combined our two loves last night and look how great they turned out. We made this with spinach but you could use ham too.

Have a good quiche recipe you already love but want it smaller? Use that with our timing and how we made these bite size pie crusts. This one uses our easy spinach quiche recipe to fill, but in a smaller form. Made as a tasty appetizer, breakfast or fun dinner idea, this will change the way you make this classic French recipe.

That is why we love this dish so much. You can make all sorts of varieties by changing the add ins. You can make vegetarian with lots of diced up bell peppers or broccoli florets, or add bacon bits and ham into your spinach mixture like we do often.

Pie crusts, creamed spinach, Swiss cheese, and three eggs are ready on the counter—solid ingredients for an easy mini quiche recipe.

Ingredient notes

We love to start with frozen creamed spinach from Green Giant or Birds Eye. We buy these boxes in bulk so we always have the ingredients we need on hand. Cuts down on the prep time and number of ingredients we need overall. OR you can make creamed spinach from scratch too.

Adding 1/2 cup of meat is the biggest change you can make with these but it does need to be cooked first. We often times will throw in some leftover ham and/or bacon bits with some diced up mushrooms which are good too.

We use refrigerated pie crust for ease of use or make pot pie crust from scratch if you prefer.

Do you have to par-bake crust for quiche?

That is debatable depending on whom you ask. We feel with refrigerated pie crust used here made bite sized that isn't necessary. For a larger one you may want to in order for it to loose the “wet” feel when done which you do for about 4 minutes at the designated temp. You should do this in a few minutes before pouring in your filling if you choose to do so.

Eggs and Swiss cheese are the other basics. From there you can sprinkle in salt and pepper or add bits of precooked meat like ham or bacon.

You'll need a large round cookie cutter or glass to cut the crust unless you are making it crustless like our Bisquick zucchini quiche recipe. Regular size muffin tin sprayed with non stick spray too and a bowl to mix items together.

Dough, eggs with spinach, chopped bacon, and a muffin tin are prepared on a kitchen counter for this easy mini quiche recipe.

Swaps

For a dairy free option, Daiya has a great lactose free Swiss cheese we use for our husband often. We have found Lactaid has other options as we have used in our cottage cheese quiche too.. We haven't made these in a mini muffin tin but you could we are sure, with less time.

Can you make mini quiche crustless?

You can make the insides for this and make it without the carbs on the outside too though. Read our crustless broccoli quiche recipe for that version. Both are wonderful and an easy start to the day packed with protein. Without the crust is a bit harder to get out of the pan and messier if eating with your hands but both are wonderful.

Three mini quiches made with an easy mini quiche recipe, featuring spinach and bacon, are stacked on a wooden table next to a fork and a blue patterned cloth.

Spray your muffin tin so they will slide out when your mini quiches are done. Then push it into the bottoms and fill each hole about 3/4 full (they won't rise so they won't overflow).

Before you begin this muffin tin recipe We suggest watching the video we included in this post. Then you can see how to make the egg mixture, fill the muffin cups and how we made them the right size. It will take about 30 minutes total to do.

You could alternatively use silicone muffin cups or small ramekins sprayed with non stick spray on a baking sheet instead. If they are similar sized to the hole in a muffin tin it would take the same time. As soon as the egg ham and cheese mixture has firmed and crust browned you'd remove.

Kitchen questions

What pairs well with mini quiche?

If serving these for brunch we would go with other items that can be picked up. You can use the same concept of baking in muffin tins but with sweeter fillings too. Use pie filling for sweeter options, offer fresh fruit on skewers, muffins are an inexpensive add as well as bagel bites and cream cheese.

Why is our quiche crust soggy?

We find if we bake and serve immediately we do not have this issue, but if it is going to sit for a while or you want to serve it cold you will want to par bake it for a few minutes before adding the filling. This step will fix the soggy shell you are experiencing. Set parchment paper on top with baking beans to keep it from rising for about 10 minutes, then add filling and continue baking until set.

Can you add meat into quiche?

Yes but it needs to be precooked. Diced leftover ham is great after the holidays to fold into your mix, cooked bacon bits work well or ground sausage sauteed and browned is fun especially if you use the spicy roll.
