Have you made bread pudding in an Instant Pot yet??!! It was so good!! We had it for dessert but it would be a great brunch menu item or a treat for breakfast too. It's definitely one of our favorite Instant Pot recipes We make every weekend.

If you've never “baked” in your pressure cooker it is quite easy. We have made our famous raisin bread pudding in the oven over the years, especially during the holidays. Now it was time to see if there was a way to make it pretty in this multicooker too. We was curious to see.

You can use any brand you might have at home to get this done. We love easy Ninja Foodi recipes and desserts but do have an IP and crockpot express as well. They all are electric and have the high pressure function so use what you have.

We will start by saying that we have made a lot of different bread pudding recipes and for each one we've used day old French bread…we didn't do that this time. Instead since we was making raisin bread pudding we used a loaf of raisin bread and it worked out incredibly well!

We have made this in the oven too with a fruit kick to it. You should try them all and see which you like best. If you don't want to heat up your whole house though using your pot is a great idea. Apple pie bread pudding. You could use this raisin bread instead for this too if you wanted.

Ingredient notes

Your large Eggs should be added at room temperature and whisked first too for the best fluffy results.

You are going to want something thicker than milk ideally so we use whipping and/or heavy cream to make everything super moist.

What kind of bread is best to make bread pudding?

the best base to start off with is a loaf of Sunmaid Raisin bread cut into large bite size cubes. Ideally leave it on the counter so it's kinda' “day old” texture (on the dry side). You could use Sara Lee Artesano (without heels) too if you don't want raisins.

Your salted Butter should be melted to integrate it. We like Kerrygold brand the best for a rich smooth texture and rich flavor.

We add Apple sauceseriously this is the BEST because it adds a lot of moisture but in a healthy way (then eat the rest for snacks).

And to make it sweet we add some organic Maple syrupreal maple syrup is so much better to be baked inside.

Swaps

You could add 2 tbsp of caramel bits though if you wanted to. We would do this sparingly, not more than 3 tbsp of peeled and diced but that would be a great add in. Once cut press down a few paper towels to remove as much moisture from them as possible before folding into the batter.

You can make a simple glaze with powdered sugar and milk, or use heavy cream, or even bourbon if you want to add a punch of flavor. Otherwise you could spoon pie filling over the top like we did with our Strawberry bread puddingoh this was oh so yummy.

You can use dairy free butter alternative. Sour cream can be used instead of applesauce, or Greek yogurt. Agave is an alternative to maple syrup. You don't need any more sweetness on top but a bit of frosting is good, or whisk powdered sugar with a bit of milk to make your own.

You can make this with coconut milk if need be. It won't be quite as creamy and may not firm up quite as much because that has less fat but will work. We've done that to make French toast for our hubby.

Tips

You will want a small so cute bundt pan to make this. We think this works a lot better than a round springform pan because it bakes more evenly. Otherwise the middle will be slightly underdone by the time the outside is a bit too dry. get one + a mixing bowl to combine.

7″ bundt pan is what we used and best, it can be seen above. Use a bit of cooking spray inside so it doesn't stick though the melted butter will help a bit.

Do you need to cover the pan with foil?

When “baking” in an Instant Pot or Ninja Foodi pressure cooker you will want to cover the top with foil. The reason why you want to do this is so the condensation doesn't drip on to the top and make it soggy. If baked in the oven this isn't necessary.

How Long to Cook Bread Pudding in Instant Pot

Set to high pressure cook for 20 minutes cooking time. Do a natural release until all steam is released which will take another 10 minutes or so. Then you will take foil off Put on a cooling rack and allow to completely cool so egg can continue to cook and solidify inside the bundt pan.

Always allow it to cool quite a bit and pull away from the edges before gently flipping it over with a plate on top and let it slide out. When it is cooled carefully flip pan over on to a plate and melt frosting or serve with ice cream.

A slice of decadent bread pudding with white icing sits gracefully on a decorative plate, crowned with sweet strawberry slices—a delightful treat that rivals even the richest instant pot bread pudding.

If you wanted to make this in smaller pieces you could. You would need an egg mold like we used to make Instant Pot pancake bites with blueberries. You make as directed below but spoon inside this accessory to bake for half the time. My kids love making and decorating a few Instant Pot donuts for breakfast or dessert this way too.

It is somewhat like a Instant Pot breakfast casserole recipe we suppose. With a Foodi you will use the lid that is not attached, beyond that the same steps should be followed.
