Ninja Foodi Mexican Pizza
We think we all love layers of meat and cheesy goodness for dinner. This is the ultimate in comfort food cooked in 4 minutes! That is right!
If you don't have a pressure cooker we'd highly recommend one. You can cook a traditional meal that normally takes several hours in your crockpot in 15 minutes flat typically. Other brands that work the same are Crockpot Express and the Ninja Foodi.
If you are new to pressure cooking we have a lot of easy one pot meal recipes for you here. To begin with let's start with a few basic tips:
- You can PRINT this —–> Instant Pot cooking times cheat sheet that will help you understand how long meat, vegetables and beans take to cook in your pressure cooker.
- We HIGHLY recommend you buy this non stick pot.
- You should know how to deglaze a pressure cooker after sautéing but it won't have as many issues with this better liner.
For reference, this is the model we have (a 6 quart) and use for all recipe creations.

If your days are non stop dropping off kids, grocery shopping, cleaning, and working, you don't have a lot of dinner prep time. My days usually look something like this and we only have under an hour to prep, cook, and serve dinner for five of us. We're all about a nutritious meal packed with protein and flavor, this one tops the list at our house!
Here's how easy this cheesy Instant Pot Mexican pizza is to make. No wonder it's on our list of Instant Pot kids recipes!First you will need a Ninja Foodi, Crockpot Express or Instant Pot to pressure cook. We have a 6 qt. Instant Pot.
A 6″ or 7″ springform pan is necessary too. 6 inch worked great using small corn tortillas.

Mexican Pizza in Instant Pot
You are going to want some protein that has been precooked. You can use ground beef or lower fat ground turkey. We used Foster Farms brand, or lean ground beef works too.
You will want a lot of shredded Cheese – we used cheddar and pepper jack but any type works really.
And then for the layering you want some King size corn tortillas – about 7″ size will fit nicely into the pan without having to rip them to fit.
Enchilada Sauce is what we used for the sauce, we used medium heat but you could make spicy or use our tamale sauce instead.
And then to add goodies into the layers we like sliced black olives, green onions, the choices go on and on.
As for the necessary items you need a 6″ Springform pan Instant Pot or electric pressure cooker.
Optional add ins:
- Taco seasoning packet – add in when cooking meat
- Can of diced tomatoes – to sprinkle in between the layers, or use pico de gallo salsa
- or add in 1/2 cup with meat when cooking
- Refried beans – to add a thin layer when you're layering
We are telling you this is so good and solid for two people to split!
