We bet you've made these before and served them as a side dish right? Filled with butter, sour cream and chives is boring. Period.

  1. Since we are using our Crock here, we will share crockpot baked potatoes first. It is the easiest way to make them with little prep on your part.

Ingredient notes

  • 6 russet potatoes is what we needed to feed our family
  • We prefer boneless pork chops so the meat breaks down. If you wanted to cook separate with the vegetables in the Crock you could cook more meat with Boston butt in the oven that way.
  • We use a sweet and spicy Sweet Baby Ray's barbecue sauce
  • Shredded cheddar cheese is what we use but you could use any variety to fill the insides.
  • To top we use diced green onions for a touch of color, texture and flavor too
  • Then add seasonings of your choosing such as salt and pepper

Twice Baked Pulled Pork Potatoes

When Pulled Pork Twice Baked Potatoes are done you can slice open, fluff the insides, shred meat and load it right in. If you wanted to make twice baked potatoes instead that is wonderful too. You'd just

  • Slice each potato in half lengthwise
  • Scoop out 3/4 of the middle leaving a bit remaining on the edges of the potato shell so it doesn't fall apart
  • Put flesh, shredded pork, shredded cheese, bbq sauce if you want to make bbq pork, chives, cheese and green onions into a bowl and combine
  • Spoon back into the potato jacket
  • Put into preheated air fryer basket with more cheese on top and follow our air fryer potato skins timing.

You can brown these in a preheated oven at 400 degrees on a baking sheet too. 5-6 minutes usually does the trick to melt the cheese on top.

We will enlighten you here to the fact that about anything and everything tastes good inside a fluffy baked potato. It can and should be served often as a main dish with vegetables, shredded as pulled pork sliders and all the things inside. We will convince you of that too after you make this one.

Leftover Pulled Pork Recipe

If you did have leftovers you could cook the veggies alone using one of the methods above and be done. Pig isn't the only protein that works well inside, and of course there are vegetables galore that you can pile inside if you want meat free.

What Goes well with Pulled Pork?

For years we would fill these with our Instant Pot chiliwe still do this today. One we was thinking of a way to use up leftovers and it dawned us that pretty much any protein would taste great inside this Idaho staple like

  1. It makes a great leftover taco meat recipe
  2. For a quicker method with the other white meat, follow our pressure cooker shredded chicken steps
  3. And for beef we would use our Instant Pot shredded beef recipe

We also love chopped up slow cooker bbq meatballs stuffed inside if we have leftover taters left. Jump to recipe below and let us know if you tweak it beyond this. You are going to need barbecue sauce, taters, meat, salt and pepper and you will want to top with cheese and maybe some sour cream at the end.
