Ingredient notes
You'll want to start with a packet of dry Lipton onion soup mix will add all the flavor you need. You can make our copycat onion soup mix recipe first if you don't want to use the store bought packets.
You want to add a large beef chuck roast ideally because this cut has a decent amount of fat which means more flavor and it will fall apart to become fork tender easier when marbled too.
As far as adding vegetables potatoes onions and carrots are best. Typically we will buy a bag of baby carrots and dice up the others into large bite size pieces. You want to keep them a bit larger so they don't disintegrate with the heat.
And to create enough heat you want a few cups of water, beer or beef broth of your choice for liquid needed.
Can we cook a roast with beer?
Yes!! That is what we used here to add even more flavor. Like we do with our Mississippi pot roastthe liquid is up to you. If you want to omit the beer you can substitute it with more broth instead. The alcohol will be cooked off and the only reason it's great is because it adds another layer of bold flavors.
If you're in a rush but want a hearty comfort food meal at the end of the evening this is a great choice. Serve it with slow cooker mashed potatoes and you're set!

Here is a quick step by step but there is a detailed printable recipe card at the bottom of this post as well to refer to. You can save it in your recipe book or come back time and time again.
We do suggest using the combination of broth and beer for the most flavor possible. Those and the dry soup mix create the most good pot roast recipe.

How Long to Cook Roast with Onion Soup Mix in Slow Cooker
You need to give this time to allow the heat to break down the connective tissues so 8 hours is about right to get it to shred easily. Of course the cook time will depend on how large and thick your piece is but this is generally solid.
Can you cook this on high?
This is NOT recommended! If you want your thick piece of meat to get as tender as humanly possible keep it on low. Remember the idea of slow cookers, LOW and slow y'all. Typically it is a bit more than half the time if you must, but not worth it.
How to Thicken the Gravy
We suggest that you use as much of the drippings in the pot when serving. You can pour it over as is but it won't be as thick. You can pour it into a saucepan though and with a roux made of cornstarch and cool water you can whisk this in when bubbling to create a rich thick gravy lke we do with our Instant Pot rump roast.

Do you have to brown a roast before putting it in the Crockpot?
It is not a must. Some prefer to have the outside browned with some olive oil in a pan on the stovetop before cooking, but to make prep quicker you can skip that step. If you did want to brown for 2-3 minutes on each side.
Do you need to turn a roast in the slow cooker?
No, this isn't necessary either. The steam and hot liquid will get the top and bottom as tender. You can if you think you must but we don't feel like it makes a difference and in general it makes more of a mess than is necessary.
