Instructions

  1. First, prepare the graham cracker crust in your 7-inch springform pan.
  2. Preheat your oven to 300°F (150°C). In a medium bowl, combine the graham cracker crumbs and 2 tablespoons of sugar. Stir in the melted butter until the mixture is well combined and resembles wet sand. Press this mixture firmly and evenly into the bottom of the 7-inch springform pan. Bake for 10 minutes to set the crust, then set it aside to cool slightly.
  3. Next, prepare the cheesecake mixture. In a large mixing bowl, cream together the softened cream cheese and the remaining sugar using either a stand mixer or an electric hand mixer until smooth and fluffy.
  4. Add the sour cream and room-temperature eggs to the cream cheese mixture. Mix well until just combined. Be careful not to overmix, as this can introduce too much air, which can cause cracking during cooking.
  5. Stir in the vanilla extract and all-purpose flour. Mix on low speed just until the flour is fully incorporated and the batter is smooth. Do not overmix. Pour the cheesecake mixture evenly over the prepared and cooled graham cracker crust in the springform pan.
  6. Pour 1 cup of water into the bottom of your Instant Pot liner. Place the trivet or steamer rack into the bottom of the pot. Create a “sling” out of aluminum foil by folding a long sheet of foil into a sturdy strip that can support the springform pan. Place the pan onto the foil sling, then carefully lower the pan and sling onto the trivet in the Instant Pot. This sling will make it easy to lift the hot cheesecake out later.
  7. Secure the lid on your Instant Pot and ensure the sealing vent is in the “Sealing” position. Select the “Pressure Cook” or “Manual” setting and set the time for 33 minutes on HIGH pressure.
  8. Once the cooking cycle is complete, allow the Instant Pot to perform a Natural Pressure Release (NPR). This means you do nothing and let the pressure release on its own, which usually takes about 10-15 minutes. Once all the steam has naturally released and the float valve has dropped, carefully open the lid.
  9. Gently remove the cheesecake from the Instant Pot using the foil sling and place it on a wire cooling rack.
  10. You might notice some condensation on top of the cheesecake. Gently dab any excess water off the top using a paper towel. Allow the cheesecake to cool completely at room temperature on the wire rack. Once fully cooled, cover the top of the pan tightly with plastic wrap and transfer it to the refrigerator. Chill for a minimum of 6 hours, but ideally overnight, to allow the cheesecake to fully set and achieve its perfect creamy texture.
  11. Once thoroughly chilled, carefully release the sides of the springform pan. Use a thin knife or spatula to gently separate the crust from the bottom of the pan if needed, then slide the cheesecake onto a serving plate. Serve chilled with your favorite toppings!
